The producer
The Cossy family has been producing grapes for other Champagne houses since 1764, and in the 1950s, they decided to sell the champagne from their vineyards under their own name.
Family-owned, the Cossy Champagne House is headed by Sophie Cossy, who took over the running of the estate at the age of 26, following her father’s passing.
Sophie Cossy is passionate about producing sophisticated champagnes which offer new tasting experiences.
The vineyard
The Cossy Champagne House watches over a sustainable 7-hectare vineyard, spread over 34 different plots located to the south of Reims.
The wine
Cossy's Sophistiquée Extra Brut 2012 champagne is made from vineyards located on the Montagne de Reims. This Cœur de Cuvée is produced based on the 2012 harvest and its dosage is 5.5 g/litre.
The blend
Sophistiquée Extra Brut 2012 by Cossy comprises a blend of Pinot Noir (40%), Chardonnay (40%) and Pinot Meunier (20%).
The tasting
Colour
The colour is a beautiful pale yellow. The effervescence is fine and progressive.
Nose
If the nose opens with gourmet pastry fragrances, the bouquet becomes more complex with aeration, exuding delicious fruity notes (stewed and tangy white fruits) and slightly smoky.
Palate
Ample and generous, the mouth seduces with its balance, its creamy touch as well as its aromas of dried fruits and bergamot. Throughout the tasting experience, the palate blends delicious iodine notes with a silky and delicate texture.
Service
For an optimal tasting experience, serve at 12°C.
