Domaine Sigalas is located on the Oia plain, in the north of Santorini island, Greece, at the heart of a prestigious wine region that has been flourishing for millennia. It cultivates approximately 40 hectares of vineyards.
A fascinating history
The history of assyrtiko, Santorini's emblematic white grape variety, takes on new momentum with Paris Sigalas. A visionary winemaker, he has successfully combined mathematics, innovation and respect for traditions to make Santorini wines shine internationally. His first vintage, the Santorini 1991 (one of the first wines from the island to obtain Protected Designation of Origin), marks the beginning of Domaine Sigalas.
Coming from a family of winemakers, Paris Sigalas grew up to the rhythm of harvests and winemaking, nurturing a deep passion for the vine from an early age. By taking over the family vineyard, he instilled his philosophy: evolving tradition through innovation and excellence, convinced that modernity and know-how can mutually enrich each other.
An exceptional terroir
Location, geology and exposure
The vines benefit from a dry Mediterranean climate, regular sea winds and strong sun exposure on the Oia plain.
The soil, of volcanic origin, gives the vineyard a particularity: it is one of the rare ones to have been spared by phylloxera. Most of the grape varieties present are ancestral, with assyrtiko being the main one (it covers about 70% of the planted surfaces). Santorini's volcanic origin brings remarkable minerality and salinity to the wines.
Climate
The extreme Mediterranean climate is characterized by low precipitation, hot summers and constant sea breezes that protect the vines from excessive heat and diseases.
Cultural practices
The vines are pruned in kouloura, a type of pruning typical of Santorini that takes the shape of a nest and effectively protects the grape clusters from wind and sun. The estate mainly cultivates assyrtiko, but also aidani, athiri, mandilaria and mavrotragano. The harvest is manual and grape selection is rigorous, respecting the terroir.
Winemaking and aging
The wines are vinified with great technical precision, using both stainless steel tanks and barrels for certain vintages. Recent experiments on the island's terroirs highlight the diversity of soils and microclimates.
The style of Domaine Sigalas wines
Sigalas assyrtiko is distinguished by its power, minerality, saline freshness and remarkable aging capacity. The whites are generally dry, taut, with lively acidity, notes of citrus, gunflint and iodine.
The estate also produces sweet wines (Vinsanto) and some reds from indigenous grape varieties such as mavrotragano.
