The Estate
The M. Chapoutier estate, founded in 1808 by Polydor Chapoutier in the Rhône Valley, is a family history of winemaking passion. In 1879, Polydor began vinifying grapes from his own vineyards, and the company expanded under the leadership of Max Chapoutier until 1977. His sons, Marc and Michel Chapoutier, then took over, introducing a major innovation: the adoption of biodynamic viticulture in the 1980s. This unique approach highlights the terroir and improves the quality of the wines. The estate internationalized, owning vineyards in France, Portugal, Australia and Spain. Since 2017, Mathilde Chapoutier, Michel's daughter, has continued the family tradition as Commercial Director, upholding the legacy of excellence and innovation of this prestigious winery.
The Vineyard
The vines of Domaine Combe Pilate "Les Lognards" flourish in the IGP Collines Rhodaniennes appellation. The terroir is characterized by complex soils composed of leptynites, gneiss-type metamorphic rocks, granitoids and calcareous loess. This geological diversity imparts a unique identity to the vineyard, conducive to the expression of Viognier.
Winemaking and Aging
The grapes are hand-harvested at optimal maturity. After whole-cluster pressing and a light settling, fermentation takes place primarily in demi-muids and foudres (85%, of which 10% are new), complemented by 15% stainless steel tanks. Aging is carried out on the full lees in demi-muids for 10 to 11 months, with a moderate use of sulfur.
