The estate
Nicknamed “Boll” by the Champenois or “Bolly” by the British, the timeless and legendary Maison de Champagne Bollinger is part of the select circle of the greatest Champagne houses. The style of Champagne Bollinger is defined by the exemplary precision applied at every stage of its creation. Respect for tradition, hand-riddling of bottles, cork closures for reserve magnums, the last in-house cooper in the region—this pursuit of excellence has symbolized the entire culture of Champagne Bollinger since its founding in 1829 in Aÿ. More than an art, it is a heritage.
The vineyard
Bollinger owes its uniqueness to its 174 hectares spread across seven principal Champagne vineyards, 85% of which are Grands and Premiers Crus, making it one of the few houses to produce its own grapes for its blends. The house’s signature grape variety, Pinot Noir, represents 60% of the vineyard plantings.
The cuvée
The standard-bearer of Maison Bollinger, Special Cuvée owes its name to Georges Bollinger who, in 1911 and following the suggestion of his British agent, decided to name it thus because he found the term “Brut sans année” (BSA) ill-suited to a champagne of such subtlety. Sourced more than 85% from Grands Crus and Premiers Crus and presented in a very elegant case, the emblematic Special Cuvée 007 will delight lovers of great champagnes. Several versions of this Special Cuvée 007 edition have been produced. In accordance with the French Évin law, we offer the black, understated, and refined version on which James Bond does not appear.
Winemaking and aging
With a dosage between 8 and 9 grams per liter, this Brut Champagne benefits from a maturation period several times longer than the rules set by the appellation.

Tasting
Appearance
Delicate, the appearance of Special Cuvée 007 reveals a golden hue distinctive of black grape varieties, along with fine effervescence.
Nose
The nose expresses complex aromas marked by spices and ripe fruit. Notes of indulgent baked apple, compote, and yellow fruits (notably peach) are evident.
Palate
On the palate, Special Cuvée 007 stands out for its balance between vibrancy, structure, and great length. Its fine, pleasant mousse is wrapped in aromas of brioche, fresh walnuts, spices, and yellow fruits.
Serving
It is recommended to serve Special Cuvée 007 during a convivial moment at a temperature between 46 and 50°F (8–10°C) to highlight its style and aromas. You can enjoy this champagne now or let it age for a few more years in the cellar.
Food and wine pairing
Special Cuvée 007 pairs perfectly with all fish, especially raw fish and sushi. It also goes very well with shellfish, a delicious grilled lobster, or langoustines. It pairs beautifully with white meats, poultry, fine dry-cured hams, as well as certain cheeses such as Parmesan.
