Tasting

Nose
Initially revealing toasted notes and cocoa, the nose of Dom Pérignon Vintage 2015 gradually opens up to a floral bouquet of lime blossom, jasmine and peony, revealing a spicy dimension. Then, a vegetal and fruity freshness appears with notes of chlorophyll, orange peel and green papaya.

Palate
On the palate, the Champagne unfolds first delicately, then generously. Fresh peach and nectarine flesh wraps around citrus and gentian notes, before moving into a remarkably long finish.

Serving temperature

To fully appreciate Dom Pérignon Vintage 2015, it is recommended to serve it at a temperature between 8 and 10°C.

Dom Pérignon Vintage 2015 pairs perfectly with a wide variety of dishes. It complements delicate fish dishes, seafood, poultry and fine cheeses.

The precision and structure of a Dom Pérignon cuvée

The estate

Dom Pérignon Champagne owes its name to the famous monk and cellar master of the Abbaye d'Hautvillers in 1668, Pierre Pérignon, known as Dom Pérignon. Legend has it that Pierre Pérignon discovered what is today known as the Champagne method.
The commitment of the Dom Pérignon House to quality and innovation is embodied by its current Cellar Master Vincent Chaperon, who took over in 2019.

The collection

Dom Pérignon has teamed up with artist Takashi Murakami to create the design for two Limited Editions: one for Dom Pérignon Vintage 2015 and one for the launch of Dom Pérignon Rosé Vintage 2010.

The vintage

After a mild winter, the 2015 wine year was marked by distinct contrasts. Spring began with a cold spell, followed by a long period of heat and drought from mid-May to mid-August, which led to water stress and varying rates of ripening. August was the hottest since 1961, but rain towards the end of the month revived ripening. The harvest began on September 7th under sunshine and allowed for an optimal three-week cycle. The grapes, in excellent health, showed great generosity.

Winemaking and ageing

The vinification process at Dom Pérignon strictly follows the principles of the Champagne method, with an absolute requirement: only vintages are declared. The long ageing period in the cellars, which significantly exceeds the appellation standards, allows the Champagne to unfold its complexity and aromatic depth.

Blend

This remarkable Champagne is the result of a secret blend of Chardonnay and Pinot Noir.
