Tasting
Colour
The colour reveals a hue ranging from pale gold to gold, sometimes highlighted with subtle silver or bronze glints. The effervescence stands out for its finesse, persistence and great delicacy.
Nose
Elegant and understated, the nose first reveals aromas of white flowers (hawthorn, acacia, lime blossom) and citrus fruits, accompanied by hints of stone fruit. With aeration, a lovely complexity unfolds through pastry notes reminiscent of brioche and almond, underscored by a chalky, mineral imprint.
Palate
The attack is lively and precise, opening onto a mid-palate infused with minerality and a lovely tension. The texture becomes silky and rounded, leading to a lingering finish that extends delicious notes of citrus and minerals.
Food and Wine Pairing
Ideal as an aperitif, this wine pairs wonderfully with smoked salmon canapés or cheese pastries. Served with a meal, it enhances seafood, scallop carpaccio, oysters, or raw and grilled fish. It also pairs perfectly with creamy scrambled eggs, as well as soft cheeses such as Chaource or matured hard cheeses such as Comté.
Serving and Cellaring
Thanks to its extended ageing on lees, this Blanc de Blancs 2020 has excellent ageing potential and will continue to develop its aromatic complexity over the years.

The Estate
Founded in 1838 by William Deutz and Pierre-Hubert Geldermann, the Deutz house has historically been based in Aÿ. This prestigious estate in Champagne, France, oversees around 45 hectares of its own vineyards and has always stood out for its constant pursuit of elegance. Now led by Marc Hoellinger and part of the Roederer Collection group owned by the Rouzaud family, the estate retains complete independence. Under the guidance of cellar master Caroline Latrive, the house continues to uphold a refined style, while committing to sustainable viticulture.
The Vineyard
This Champagne is crafted from the finest Grand Cru and Premier Cru terroirs of the Côte des Blancs, renowned for offering the finest expressions of chardonnay in the world. The grapes come mainly from iconic villages such as Avize, Le Mesnil-sur-Oger and Oger. The vines flourish under semi-continental and semi-oceanic climatic influences, on soils composed of chalk, marl and limestone, giving the berries exceptional acidity and minerality. The estate is currently undergoing full conversion to organic farming.
Winemaking and Aging
The production of the Blanc de Blancs 2020 relies exclusively on the tête de cuvée, corresponding to the first and most delicate pressing juices. Vinification takes place at low temperature in stainless steel tanks to preserve the aromatic purity of the fruit, with no use of oak whatsoever. A complete malolactic fermentation is carried out to bring roundness. Finally, the wine benefits from extended ageing on lees for four to six years, followed by traditional manual riddling.
