The refinement and complexity of a great Tuscan wine

The estate

A passionate producer in constant search of innovation, Bibi Graetz has over the years made his name for wines that delight people all over the world with their harmonious and singular expression of the most beautiful terroirs of Tuscany.

Bibi Graetz's unique wines are made from old vineyards made up of a mosaic of grape varieties typical of great Italian wines (sangiovese, canaiolo, colorino, ansonica).

The wine

"Testamatta," which means "crazy head" in Italian, is a Tuscan wine developed from two old vineyards, where some wines are 80 years old, placed on hilltops on very rocky soils, between 250 and 600 metres of altitude.

The grapes come from 5 historical vineyards (Vincigliata, Londa, Lamole, Montefili and Siena) to which a new terroir, Olmo, has been added, which, due to its location on the slopes at an altitude of 420 metres, confers an exquisite freshness. In order to harvest the grapes at perfect ripeness, up to 8 successive selections were made during the harvest of each of these terroirs. The result of a rigorous selection of the best barrels, Testamatta is a non-conformist Super Tuscan that harmoniously exudes the purity and minerality of Sangiovese.

The vintage

A mild winter made way for a spring with rainy spells that occurred before flowering. The hot and dry conditions through summer were counterbalanced by cool nights which allowed the grapes to preserve their acidity and aromatic structure. The rain recorded before the harvest was perfect for ensuring optimum ripeness for the grapes.

Winemaking and ageing

Following the harvest done by hand, the grapes were sorted a second time in the new cellar in the commune of Fiesole before being destemmed. The grapes were pressed and then vinified in open barrels for the smaller plots and in 50hl barrels or stainless steel tanks for the larger plots. Natural fermentation with indigenous yeasts, accompanied daily by 6 manual punchings of the cap and pumping over. Pre-fermentation maceration of 7 to 10 days. Aged in 50hl barrels for 20 months.
