Tasting

Color
The color reveals an elegant pale gold hue, enhanced by delicate straw-yellow highlights.

Nose
Dense and vibrant, the bouquet opens with floral aromas and scents of ripe stone fruit, such as mirabelle plum and apricot. With aeration, a beautiful chalky minerality emerges, accompanied by notes of hazelnut, melon, country bread, and a subtle touch of white pepper.

Palate
The palate offers a superb contrast between pronounced minerality and delicate fruit expression. Carried by lovely vibrancy, the palate unfolds flavors of pineapple and pome fruit, enriched with nuances of acacia honey. The texture is both silky and generous, extending into a finish of remarkable purity.

Food and wine pairing
This cuvée pairs wonderfully with seafood, crab, or lobster. It will also beautifully complement a summer vegetable tian, pasta with bottarga, a lightly spiced poultry stew, or artisanal aged cheeses.

This sparkling wine is a brut nature, meaning it has no added dosage (0 g/l residual sugar), allowing the terroir to express itself with absolute authenticity.

The Singular Expression of a Historic Champagne Grape Variety

The estate
Founded in 1808 in Urville, at the heart of the Côte des Bar, Maison Drappier is a leading reference in the region. Now led by Michel Drappier, supported by his children Charline, Hugo, and Antoine, the family estate oversees a 110-hectare vineyard, 60 hectares of which are owned outright. A pioneer in environmental practices, the estate is renowned for its organic viticulture, its carbon-neutral footprint, and its passionate commitment to reviving forgotten grape varieties, shaping cuvées of remarkable identity.

The vineyard
The grapes for this cuvée come exclusively from the "Les Truchots" plot, located in Urville. This terroir benefits from an ideal south-facing exposure and rests on Kimmeridgian limestone soils. Certified organic, these vines are cultivated using eco-friendly methods, including meticulous plowing carried out with an Ardennes draft horse to preserve the vitality of the soils.

The blend
This wine is the result of a blend of two distinct harvest years, generally combining consecutive vintages to bring a unique temporal complexity to the cuvée.

Winemaking and aging
The creation of "Trop M'en Faut" follows a philosophy of minimal intervention. Malolactic fermentation occurs naturally, with no added yeast, and the wine undergoes neither filtration nor clarification. Aging first takes place over eight months in half-muids made of oak from the Forêt d'Orient, followed by an extended aging period of three years on lattes, giving the wine its full depth.
