Pure and natural, the Extra Brut Champagne of the Billecart-Salmon House is the subtle expression of the three local grape varieties: 40% Pinot Meunier, 35% Pinot Noir and 25% Chardonnay. The Extra Brut cuvee of Billecart-Salmon offers an intense pale golden robe, for a clear and bright whole. Lively bubbles are ultra-fine and abundant. A complex, vibrant and delicate aromatic intensity is detected on the nose. One can perceive fruitiness prevailing as well as floral and brioche notes enhanced by a hint of dried fruit. The bouquet is elegant and fresh, symbolized by the subtle charm of memon verbena. On the palate it is full and harmonious with a beautiful and delicously carved mineral tension. The finale is balanced and offers an exquisite luscious sensation.

Wine Advocate-Parker : Based on the 2014 vintage with the addition of 55% reserve wines, the NV Extra Brut saw no dosage and an additional year sur lattes before disgorgement. Unwinding in the glass to reveal aromas of iodine, oyster shells, citrus oil and freshly baked bread, it's medium to full-bodied, racy and precise, with a taut, incisive profile and a mouthwatering finish. This is certainly dry, but not so austere as to render it élitist, and it has turned out well.
