Appearance
The colour reveals a pale yellow hue with bright green highlights.
Nose
Beautifully complex, the aromatic bouquet weaves together citrus and white fruit notes with subtle exotic and floral touches, all underscored by a characteristic minerality.
Palate
The attack reveals a dense, fleshy texture, perfectly balanced by remarkable freshness. The saline, mineral-driven structure carries the wine through to a finish of striking length.
Food and Wine Pairings
This great French white wine pairs beautifully with seafood such as oysters or a scallop carpaccio. It will also shine alongside citrus-glazed poultry, veal blanquette, or a mature goat's cheese such as Crottin de Chavignol.

The Mineral, Fruit-Driven Expression of a Great Pouilly-Fumé
The Estate
While the family's winemaking history dates back to 1513, the House of Joseph Mellot truly took shape in the 20th century to become a key player in the Loire Valley. Based in Sancerre, the estate spans over one hundred hectares. As the only producer present across all eight Centre-Loire appellations, the domaine is now run by Catherine Corbeau-Mellot, supported by her sons Armand and Adrien. The house stands out for its strong environmental commitment, reflected in its High Environmental Value and ISO 14001 certifications.
The Vineyard
The "Le Troncsec" cuvée comes from an exceptional 10-hectare terroir within the Pouilly-Fumé appellation. The vines, around 30 years old, thrive on soils made up of Kimmeridgian calcareous marl, dotted with stones and clay. This unique terroir gives the wine its tension and mineral signature. The vineyard is managed according to sustainable farming principles, with mechanical soil work and carefully maintained cover crops, in strict compliance with High Environmental Value certification.
Winemaking and Aging
Following mechanical harvesting, the grapes destined for the 2025 Pouilly-Fumé "Le Troncsec" are fully destemmed. Extraction is carried out gently through direct, low-pressure pressing in a pneumatic press. The juice then undergoes static cold settling before fermentation begins. This takes place at low temperature in temperature-controlled stainless steel tanks. Aging also continues in stainless steel tanks, a method chosen to preserve the fruit's full aromatic purity and freshness.
