Appearance
The wine shows a beautiful pale white colour.
Nose
The aromatic bouquet is complex, revealing scents of white and yellow flowers mingled with white-fleshed fruit aromas such as apple and pear. Notes of honey, hay and straw intertwine with subtle touches of butter and toasted bread.
Palate
This Nicolas Joly offers a full-bodied, generous and powerful texture. The texture, often perceived as rich, is perfectly balanced by a very pronounced, structuring acidity. The finish stretches out at length with a mineral, stony and saline dimension.
Food and Wine Pairings
This dry white gastronomic wine pairs wonderfully with white meats in sauce, such as a veal blanquette, or a shoulder of lamb. It also elevates rich fish dishes, seafood choucroute, goat's cheeses, as well as culinary preparations with umami flavours.
Serving and Cellaring
To fully enjoy this Savennières, it is recommended to decant it before serving and to drink it at a temperature between 7 and 10°C. With its great structure, this wine has remarkable ageing potential and can evolve in the cellar until 2044 at the very least.
The Singular Expression of a Great Loire Chenin
The Estate
Acquired in 1960 by the Joly family, this emblematic estate is located in France, in the heart of the Loire region. This historic estate, whose winegrowing origins date back to the Cistercian monks, is now run by Nicolas Joly and his daughter Virginie. A worldwide pioneer and leading figure of biodynamics, Nicolas Joly converted the entire vineyard as early as the 1980s. The estate stands out for its absolute quest for authenticity, rejecting any standardisation in order to let the purity of the terroir speak through living wines of exceptional international renown.
The Vineyard
This Savennières Roche aux Moines "Clos de la Bergerie" comes from a 2.77-hectare plot located in the Savennières appellation. The Chenin vines, around forty years old, thrive on gentle east-facing slopes. The terroir is made up of shallow soils of schist and quartz. The vineyard is fully certified biodynamic, encouraging great biodiversity with the presence of animals and the use of animal traction. Yields are naturally kept very low thanks to a high planting density, and the harvest is exclusively by hand.
Vinification and Ageing
The making of the Savennières Roche aux Moines "Clos de la Bergerie" 2024 relies on minimal intervention in order to respect the identity of the place. Fermentations start spontaneously thanks to indigenous yeasts, without any temperature control. Malolactic fermentation takes place naturally. The wine is then aged for approximately eight months in old oak barrels, with virtually no new oak. Finally, the wine is bottled without any fining or filtration.
