Tasting Notes
Appearance
The colour reveals a pale, brilliant golden hue, crossed with subtle luminous highlights.
Nose
The nose opens on generous aromas of white-fleshed fruits, such as apple and pear, enhanced by citrus notes and a delicate mineral touch reminiscent of wet stone.
Palate
Full-bodied and well balanced, the palate offers a beautiful harmony between the richness of the fruit and a refreshing liveliness. The tasting extends into a saline, mineral finish of impressive length.
Food and Wine Pairing
This white wine pairs perfectly with seafood, shellfish or delicate fish such as a monkfish fillet. It also goes wonderfully with poultry in a lightly creamy sauce, as well as hard cheeses such as a young comté.
Serving and Cellaring
For optimal tasting, it is recommended to serve the Mas la Chevalière "Chardonnay Réserve" 2025 at a temperature of between 10 and 12°C. This wine can be enjoyed now and will continue to develop favourably until around 2030.
The Elegance and Tension of a High-Altitude Chardonnay
The Estate
Founded in 1850 by Jean-Victor Laroche, Domaine Laroche draws its historical roots from the heart of Chablis, notably within the famous Obédiencerie. Driven by a desire to explore new terroirs, the estate expanded into the Languedoc in 1995 with the creation of Mas la Chevalière. Now owned by the AdVini group, the estate is technically overseen by Grégory Viennois. Strongly committed to an agro-ecological approach, the vineyard stands out for its ability to produce wines combining precision, freshness and environmental respect, illustrating a perfect mastery of Chardonnay across two emblematic regions.
The Vineyard
The vineyard from which this Vin de France originates is located near Béziers, in the Orb valley. The vines flourish on the Peyroli terroir, at an altitude ranging between 400 and 500 metres. This exceptional geographical setting, characterised by steep slopes and cool nights, allows for slow grape ripening. Resting on clay-limestone soils, this southern vineyard is fully certified organic, reflecting a deep respect for biodiversity and natural balance.
The Vintage
2025 is characterised by sunny and particularly promising weather. Climatic conditions favoured ample, generous berry ripening, while preserving excellent quality potential for the harvest.
Winemaking and Ageing
The harvest is followed by pneumatic pressing of whole clusters to preserve the purity of the juice. After a natural cold settling period of 24 hours, alcoholic fermentation takes place in temperature-controlled stainless steel tanks at low temperature (15°C) for around twelve days. The making of the Mas la Chevalière "Chardonnay Réserve" 2025 continues with ageing on fine lees in stainless steel tanks for approximately five months, a method favoured to preserve all the liveliness and aromatic freshness of the wine.
