The vineyard
The Les Vaudevey climate nestles in a narrow and preserved valley of Chablis. The estate holds a major position there with a main plot in a single block. This exceptional terroir is characterized by a full eastern exposure that catches the sun from morning until mid-afternoon. The vines cling to very steep slopes that can reach a 30% incline. The soil, composed of Kimmeridgian limestone, reveals itself to be light and stony, conferring upon the wine its freshness and its very particular mineral character.
The vintage
The 2023 vintage stands out in Burgundy for its generosity and high quality. After climatic and sanitary pressures observed from the end of winter to spring, the heat at the end of August favored optimal ripening of the grapes. A rigorous selection of harvest dates, plot by plot, allowed for the preservation of freshness and minerality despite rapid ripening. The harvest began on September 7th with the estate's Premier Cru Côte de Léchet plot. The first juices revealed rich and balanced aromatics, followed by harmonious fermentations and extended aging on lees. Yields returned to satisfactory historical averages.
Winemaking and aging
Upon arrival at the winery, the grapes for the Chablis Premier Cru "Les Vaudevey" 2023 undergo meticulous manual sorting. Pneumatic pressing is carried out at low pressure with separation of the different juice fractions. Only the press hearts are selected. Gentle extraction aims to preserve the noble aromatics of the Chardonnay. Alcoholic and malolactic fermentations take place 15% in French oak barrels in the historic cellars of the Obédiencerie in Chablis, and 85% in stainless steel tanks on fine lees. Aging continues for up to 12 months between fermentation and bottling.
