Tasting
Nose
The aromatic bouquet opens with citrus notes, dominated by lemon, mingled with white-fleshed fruit aromas such as green apple, cooked apple and pear. Although still reserved in its youth, it hints at subtle spicy nuances.
Palate
The attack is lively, taut and dynamic, carried by a vibrant and perfectly balanced acidity. The palate reveals a particularly pronounced minerality, typical of its terroir, enhanced by nuances of tea and orange zest. The whole extends into a long, harmonious and delicately spicy finish.
Food and Wine Pairing
Thanks to its dry profile and pronounced minerality, this white wine pairs wonderfully with seafood platters, delicate fish or a selection of regional cheeses.
The Incisive and Mineral Expression of a Chablis Wine
The Estate
Founded in 1850, Domaine Laroche is a true institution located at the heart of Chablis, in Burgundy. Its historic headquarters are located within the Obédiencerie, a former 9th-century monastery considered the birthplace of the appellation's wines. Now led by Jean-Baptiste Mouton and part of the Advini group, the estate stands out for its pioneering agro-ecological approach. With a vineyard of around 90 hectares, the estate crafts cuvées of remarkable precision, blending a thousand-year-old spiritual heritage with contemporary, biodiversity-conscious viticulture.
The Vineyard
This wine comes from the Chablis vineyard, located in the northern part of Burgundy. The vines, averaging around 40 years of age, thrive on the region's typical Jurassic soils, giving the grapes a unique mineral identity. The estate practices sustainable, holistic viticulture, certified High Environmental Value (HVE 3A). The soils are worked without any herbicides, and biodiversity is encouraged through grass cover, hedge planting and the installation of beehives, following a demanding philosophy summed up by the principle "one man, one plot".
Winemaking and Ageing
The grapes used to produce the Chablis 1er Cru "L'Homme Mort" 2023 are carefully harvested, combining manual and mechanical methods depending on the needs of each plot. Winemaking and ageing then take place in the historic vaulted cellars of the Obédiencerie. These centuries-old facilities provide optimal ageing conditions to preserve the tension and purity of the fruit throughout the winemaking process.
