Tasting notes
Colour
The colour reveals a deep red hue, enhanced by delicate violet nuances.
Nose
Wonderfully intense, the nose exhales aromas of well-ripened black fruits, such as blackberry, lifted by spicy notes and subtle hints of oak.
Palate
Full-bodied and rounded, the palate charms with its balanced structure and smooth tannins. The aromatic expression remains concentrated throughout the tasting, extending into a persistent, warm and elegant finish.
Food and wine pairing
This wine pairs beautifully with slow-cooked meats such as beef cheeks, game like wild boar or venison, as well as grilled lamb or duck breast. It will also complement fine cured meats or characterful cheeses such as Roquefort, pecorino or aged Comté.
Service and storage
With its fine structure, the Post Scriptum 2023 can be enjoyed young but will continue to develop in the cellar, drinking well until around 2029.
The elegance and power of a red wine from IGP Côtes Catalanes
The estate
Founded in 1997 by Hervé Bizeul, a former sommelier and journalist, the Domaine du Clos des Fées has become a true benchmark in the Roussillon. Located in the Agly valley, the estate has developed around an environmentally conscious philosophy, preserving a vast natural ecosystem. Today, Hervé Bizeul, alongside his wife Claudine, runs this roughly forty-hectare estate. By showcasing historic terroirs and old vines, the producer crafts authentic cuvées that reflect the full potential and richness of this winegrowing region in the south of France.
The vineyard
Classified under IGP Côtes Catalanes, the vineyard behind this wine is rooted in exceptional terroirs made up of clay-limestone soils and schist. The vines, farmed using ecological methods without chemical products, benefit from meticulous care and late manual harvesting to ensure optimal berry ripeness.
The vintage
The 2023 vintage stood out for its distinctive profile. Lacking the usual exuberance and richness typically destined for the estate's flagship cuvée, the juices revealed an unexpected and remarkable evolution over time, giving rise to this unique cuvée.
Winemaking and aging
The winemaking of the Post Scriptum 2023 favours a minimalist approach to let the terroir express itself. It is characterised by long macerations under controlled temperatures. The aging is then carried out partially in oak, adding complexity to the blend while preserving the purity of the fruit.
Grape varieties
This wine is mainly made from old-vine Grenache Noir, complemented by Carignan and Syrah.
