Colour
A delicate pale yellow, enhanced by brilliant silver highlights.

Nose
The aromatic bouquet reveals itself as complex and energetic, carried by notes of citrus and stone fruit, particularly lemon zest and white peach. Subtle touches of pear and white flowers, along with delicate herbaceous nuances and white pepper, enrich the whole.

Palate
The palate offers a superb balance between fruity generosity and mineral tension. The attack, lively and highly precise, gives way to an unctuous mid-palate with nectarine flavours. The finish stretches on with beautiful saline notes, retaining remarkable freshness.

Food and wine pairing
This white wine pairs wonderfully with seafood, oysters or a fish tartare. It will also go very well with light poultry, grilled green vegetables, asparagus, or fresh goat's and sheep's cheeses.

Service and storage
Domaine du Clos des Fées Blanc 2025 can be enjoyed now to appreciate its full vibrancy, but it will continue to evolve favourably in the cellar until around 2028.

The elegance and mineral freshness of a white wine from Roussillon

The estate
Founded in 1998 by former sommelier Hervé Bizeul and his wife Claudine, Domaine du Clos des Fées is a major reference in Roussillon. Starting out in a simple garage with just a few hectares, the estate now spans a vineyard of approximately 30 hectares. Still led today by owners Hervé and Claudine Bizeul, the estate stands out for its sustainable viticultural approach and its determination to elevate the local terroirs to the highest level. The domaine is thus internationally recognised for its cuvées, which combine character, precision and an authentic expression of their surroundings.

The vineyard
Located in the Côtes du Roussillon sector, near the village of Vingrau, the vineyard flourishes at the foot of a spectacular limestone cirque. The vines, perched between 200 and 400 metres in altitude on steep slopes, benefit from clay-limestone soils and north- and west-facing exposures ideal for preserving the freshness of the grapes. Swept by the tramontane wind and surrounded by Mediterranean scrubland, this demanding terroir is cultivated using sustainable and organic methods, with no chemical inputs, favouring manual work and soil tilling.

Winemaking and aging
Early morning hand-harvesting helps preserve the integrity and freshness of the berries. After transport in refrigerated trucks, the whole bunches undergo a gentle, direct, low-temperature pressing. Fermentation takes place slowly in stainless steel tanks with indigenous yeasts. The wine is then aged on fine lees, encouraging the development of its aromatic complexity, before clay fining and early bottling in February.
