Tasting notes
Appearance
The colour is animated by an elegant effervescence, forming a cordon of remarkably fine bubbles.
Nose
Delicate and beautifully fresh, the nose exhales subtle citrus notes, particularly lemon, harmoniously blended with floral, iodine and saline touches.
Palate
The palate seduces with its liveliness. Carried by a fine acidic tension and a medium body, this dry sparkling wine unfolds a delicate texture that stretches into a persistent finish, marked by a remarkable saline imprint.
Food and wine pairing
Ideal for elevating an aperitif, this wine also pairs wonderfully with a seafood platter, oysters, shellfish or grilled white fish.
Serving and cellaring
For optimal tasting, it is recommended to serve the Tressallier Brut Nature 2024 at a temperature of around 11°C. This wine can be enjoyed from its early years, but will continue to gain complexity and can be drunk until around 2030.

The estate
Founded in 1989 by Odile and Olivier Teissèdre, Domaine des Bérioles spans a vineyard of 17 to 18 hectares at the heart of the Saint-Pourçain appellation, in the Loire Valley. Now run by their son, Jean Teissèdre, the estate stands out for its deep commitment to respecting living ecosystems. Certified organic since 2019 and moving towards biodynamics, the estate is dedicated to showcasing local terroirs and native grape varieties through wines of great precision, becoming a key player in the revival of its appellation.
The vineyard
This sparkling wine is crafted from a blend of plots located in the commune of Cesset. The organically farmed vines benefit from an ideal south-east exposure that helps preserve the freshness of the berries. They thrive on clay-limestone soils that give this Loire cuvée its characteristic tension and mineral signature.
Winemaking and ageing
Hand-harvested grapes in small crates undergo a thorough sorting on a sorting table. After a cold settling process, fermentation takes place at low temperature to preserve aromatic purity. The Tressallier Brut Nature 2024 is then made using the traditional method, with a second fermentation in bottle and ageing on laths for twelve months. Disgorgement is carried out with no dosage whatsoever, and bottling takes place at the estate.
