Food and Wine Pairing
This white Saint-Joseph naturally finds its place alongside seafood: oysters, pan-seared scallops or, more broadly, a seafood platter all complement its freshness and minerality. It also pairs beautifully with delicate white fish in a beurre blanc sauce. More surprisingly, its structure and volume on the palate allow it to pair with roasted foie gras, particularly when served with lightly sweet and spiced notes. Finally, it can also be enjoyed on its own as an aperitif.
A fresh and precise white wine from the Rhône Valley
The estate
Domaine Coursodon is a family estate founded in the late 19th century by Jean-Auguste and Antonin Coursodon in Mauves, the historic cradle of the Saint-Joseph appellation in the Rhône Valley. Now run by Jérôme Coursodon, the fifth generation, the estate devotes itself almost exclusively to this appellation, in both red and white. Its vineyard extends over around fifteen hectares of granitic hillsides, worked by hand, following a approach of sustainable viticulture inherited from previous generations and driven by a constant pursuit of precision.
The vineyard
The plots used for this cuvée are located on the steep hillsides of Mauves and Tournon, in the historic heart of the Saint-Joseph appellation. The vines, at least thirty years old, are planted at high density on soils made up of equal parts decomposed granite and clay, with south and south-east exposures. The slope of these terraces rules out any mechanisation: goblet pruning, trellising and harvesting are all carried out entirely by hand.
Vinification and ageing
To produce Silice 2025, the hand-harvested grapes undergo a double sorting, in the vineyard and then in the winery, followed by a long, gentle pneumatic pressing. The juice is moved by gravity to preserve its delicacy. Fermentation takes place at low temperature in stainless steel tanks, with indigenous yeasts, followed by ageing without any contact with wood, intended to preserve the full mineral purity of the granitic terroir of Mauves and Tournon.
