Description
Château Pavie signs an aromatic and elegant grand vin from Saint-Émilion
The property
The origin of the estate is very ancient. The vines have been cultivated on the slopes of what is today the Château Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, Premier Grand Cru Classé "A", possesses one of the finest terroirs of Saint-Émilion.
Château Pavie is renowned for the structure and elegance of its wines resulting from a controlled harvest with yields best suited to the terroir: 31 hl/ha.
The vineyard
The vineyard of Château Pavie comprises a single 37-hectare block, making it one of the largest Premiers Grands Crus Classés of Saint-Émilion.
Located on the south-east side of the hill of Saint-Émilion, the vineyard extends over three levels as it climbs the slope, with vines averaging 49 years old. The "plateau" (85 meters above sea level) consists of clay-limestone soil over Astéries limestone, and the "mid slope" (55 meters above sea level) consists of fine-textured brown clay-limestone soil. The "foot of the slope" in turn is composed of sandy to sandy-clay soils with an iron pan between 60 and 80 cm and sandy-gravelly soils. Particular attention is given to the vineyard, part of which has undergone a replanting programme including raising the trellising to increase the leaf surface area, specific pruning according to vine age, thinning and leaf stripping.
Blend
Château Pavie 2010 is a blend of merlot, cabernet franc and cabernet sauvignon.
