Description

Characteristics and Tasting Tips for Eolithe 2023 from Fosse-Sèche

Tasting

Colour
The glass lights up with a vibrant, deep red hue.

Nose
The nose reveals beautiful aromatic complexity with notes of violet and liquorice, accompanied by red and black fruits such as cherry, redcurrant and blackcurrant. Mineral nuances of graphite and subtle herbaceous touches complete this expressive bouquet.

Palate
On the palate, this wine charms with its light to medium structure, carried by a lively, refreshing acidity. The palate unveils a lovely concentration of red fruits, notably cherry, red plum and raspberry, balanced by a distinctive minerality and earthy notes. The tannins are fine, well integrated and velvety, providing an elegant structure without overpowering the aromatic expression. The finish lingers persistently, leaving an impression of freshness and fruity purity.

Food and wine pairings
This wine pairs perfectly with lamb, especially roasted or slow-cooked preparations with herbs. It also goes very well with roast poultry, pork dishes and goat's cheeses. Mushroom-based dishes and Mediterranean preparations with grilled vegetables also make excellent pairings.

Serving and cellaring
Eolithe 2023 can be enjoyed now, while also offering great potential for further development.

An elegant, mineral Cabernet Franc

The estate
Founded in 1998 by the Pire family, Fosse-Sèche extends over 45 hectares, of which only 15 hectares are planted with vines. Since 2012, the twin brothers Guillaume and Adrien Pire have run the estate, with Adrien devoting himself to viticulture while Guillaume oversees the winemaking. The estate stands out for its exceptional environmental commitment: certified biodynamic since 2013, it dedicates two thirds of its land to the preservation of biodiversity and is recognised as a national bird sanctuary. It is home to beehives and a herd of goats, and maintains wooded areas, creating a true ecosystem in the service of respectful viticulture.

The vineyard
This Vin de France comes from a unique terroir located on the Brossay plateau in Vaudelnay. The vineyard rests on Jurassic soils composed of flint, gravel and clay, enriched with iron oxide. This geological particularity, recognised since the Middle Ages, gives the wines a distinctive minerality. The slightly convex terrain benefits from a windy, cool exposure, while the flint soils store heat, creating an ideal thermal balance. The vines, aged between 10 and 60 years, are farmed using certified biodynamic agriculture, with hand harvesting and rigorous sorting.

The vintage
The 2023 vintage offered particularly favourable conditions for the ripening of Cabernet Franc, allowing optimal phenolic ripeness to be reached while preserving freshness and acidity.

Winemaking and ageing
After hand harvesting and several successive sortings, the grapes for Eolithe 2023 are fully destemmed and then vinified in concrete egg-shaped tanks from Maison Nomblot. Fermentation takes place naturally with indigenous yeasts, without inoculation. Malolactic fermentation occurs spontaneously, according to the conditions of the vintage. Ageing on the lees lasts between 14 and 21 months in the egg-shaped tanks, fostering the development of complexity and texture. Racking and any additions take place only after malolactic fermentation has fully finished.
