Tasting notes
Colour
The colour reveals an intense ruby red hue with garnet highlights, while retaining an attractive translucency.
Nose
The nose reveals fine aromatic complexity marked by floral notes of violet and a touch of liquorice. These are joined by subtle smoky and mineral nuances of gunflint, underpinned by aromas of ripe red fruits such as raspberry and cherry.
Palate
On the palate, this red wine displays an elegant, fine and precise structure. The tannins are silky and delicate. The balance between acidity and alcohol is well judged, giving way to a well-integrated minerality and a remarkably persistent finish.
Food and wine pairing
This wine pairs perfectly with roasted white meats such as duck or squab, as well as braised veal. It also goes very well with dishes featuring truffle notes, seafood preparations with delicate sauces, or mature cheeses.

The elegance and mineral precision of a Premier Cru from Burgundy by Chandon de Briailles
The estate
Founded in 1834, the Chandon de Briailles estate is located in the Côte de Beaune, in Burgundy. This historic family property is now run by brother and sister Claude and François de Nicolay. Spanning nearly 14 hectares, the estate stands out for its deep commitment to biodynamic viticulture, certified since 2011. Favouring an environmentally respectful approach and minimal intervention in winemaking, Chandon de Briailles strives to produce wines that authentically and purely express the uniqueness of their terroirs.
The vineyard
The Savigny-Les-Beaune 1er Cru "Les Lavières" comes from a 2.60-hectare plot located halfway up the slope, benefiting from a south/south-east exposure. Planted in 1956, these old vines flourish on shallow soils composed of clay, marl and limestone slabs known as "laves". The vineyard is worked exclusively with horses to avoid soil compaction, and traditional copper treatments are replaced with sprays of skimmed milk to combat disease while protecting the vine.
The vintage
2022 began with a cold, dry winter, followed by a warm spell in late March that led to early budbreak. Mild spring weather encouraged rapid flowering in mid-May. Summer proved hot and dry, but timely rainfall between late June and August helped avoid water stress. These ideal weather conditions led to a harvest in early September, yielding grapes with optimal ripeness and fine balance.
Winemaking and aging
The winemaking of the Savigny-Les-Beaune 1er Cru "Les Lavières" 2022 is characterised by whole-bunch fermentation in open concrete vats, allowing for gentle extraction. Transfers are carried out by gravity to minimise handling. Aging takes place with a very moderate proportion of new oak barrels, around 10%, in order to preserve the natural expression of the terroir and the purity of the fruit.
