Appearance
With its bright, clear ruby hue, this wine displays the beautiful transparency characteristic of an elegant Pinot Noir.
Nose
The bouquet reveals wonderful aromatic complexity, with delicate notes of red cherry, raspberry and ripe strawberry. Floral hints of violet and rose add an airy dimension, while subtle spicy and mineral nuances enhance the whole.
Palate
The attack is supple and refined, carried by fresh, vibrant acidity. Silky tannins harmoniously shape the palate, delivering concentration and depth without heaviness. The finish, with fine persistence, extends aromas of stone fruit, flowers and sweet spices, with a chalky minerality typical of the terroir.
Food and wine pairings
This wine is a perfect match for refined red meats such as beef tenderloin with shallots or herb-crusted rack of lamb. It also pairs well with roasted poultry, fish in rich sauces, and characterful cheeses such as Époisses, Comté or Tomme de Bourgogne.
Serving and cellaring
The Savigny-Les-Beaune 1er cru "Les Lavières" 2021 is best enjoyed at a temperature of 15 to 16°C. It is recommended to open the bottle one hour before serving to allow the aromas to fully express themselves. This wine can be cellared until around 2039.
A Burgundy Premier Cru combining finesse and minerality
The estate
Founded in 1834, Domaine Chandon de Briailles is a rare family-owned estate in Burgundy, based in Savigny-lès-Beaune, 4 km north of Beaune. Its 13.7-hectare vineyard, spread across 12 crus in Savigny-lès-Beaune, Pernand-Vergelesses and Aloxe-Corton, has belonged since 20001 to the Count and Countess Aymard-Claude de Nicolay and their children. Farmed in certified Demeter biodynamics since 2011, with draft horses, the estate favors natural winemaking that brings purity and elegance.
The vineyard
The climat "Les Lavières" is an exceptional parcel located mid-slope with a due east exposure. The soils, made up of iron-rich clays and quality limestone, benefit from excellent natural drainage. This clay-limestone combination gives the wines of Savigny-Les-Beaune a firm mineral structure and remarkable aromatic expression. The vineyard has been farmed in certified biodynamics since 2005, using draft horses and respecting lunar cycles.
The vintage
The year 2021 proved particularly demanding for Burgundian winegrowers. After a mild, wet winter, a severe frost episode in early April affected all vineyards, significantly reducing yields. The summer, marked by cool temperatures and regular rainfall, required constant attention. Fortunately, sunny conditions from mid-August onward enabled optimal ripening of the grapes, giving rise to elegant, precise wines with beautiful minerality.
Vinification and aging
The Savigny-Les-Beaune 1er cru "Les Lavières" 2021 is vinified using a minimalist approach that favors the pure expression of the terroir. Fermentations are carried out at controlled temperatures, not exceeding 30°C. Aging takes place in used French oak barrels in order to preserve the fruit’s aromatic delicacy. This approach allows for an authentic, natural expression of the wine.
