Nose

Palate
Generous and perfectly balanced, the palate offers a silky texture of remarkable persistence. The finish is long, vibrant and saline, underlining a striking purity and mineral precision.

Food and wine pairings

This wine pairs beautifully with delicately flavoured seafood, such as a sea bream ceviche with sesame and bergamot or pollack served with artichokes and potatoes. It will also enhance poultry dishes in cream sauce.

Serving and cellaring

For an optimal tasting experience of the Saint-Aubin 1er Cru "Le Charmois" 2023, it is recommended to serve it at a temperature between 10 and 12°C. This vintage can be enjoyed now and will continue to develop until around 2030.

The mineral precision of a great white Burgundy

The estate

Founded in the late 2000s by Francine Picard, who currently runs the estate, Au Pied du Mont Chauve brings together the family's viticultural jewels across the villages of Chassagne-Montrachet, Puligny-Montrachet and Saint-Aubin. Located in Burgundy, this estate is part of a family story that began in 1951. The family vineyard now extends over 140 hectares. Deeply committed to environmental stewardship, Francine Picard has intensified biodynamic practices since 2019, raising the estate among the most respected producers in the region thanks to wines combining precision, delicacy and authentic expression of terroir.

The vineyard

The "Le Charmois" Climat, located within the Saint-Aubin appellation, lies on clay-limestone soils rich in white clay. The vines flourish on steep slopes facing east and south-east, at an altitude ranging between 300 and 350 metres. The vineyard is farmed according to biodynamic principles, encouraging natural cover crops and the use of natural preparations such as silica or nettle. Strict single Guyot pruning limits yields to concentrate the quality of the grapes.

The vintage

The year 2023 stands out as the warmest ever recorded in the region. After a mild, dry winter that delayed budburst until April, flowering took place quickly and uniformly. Despite a few storms in June and intense summer pressure, harvesting began at the end of August under an unprecedented heatwave. These conditions yielded berries of perfect physiological ripeness while preserving a beautiful acidity.

Winemaking and ageing

The grapes destined for the Saint-Aubin 1er Cru "Le Charmois" 2023 are hand-picked in small crates and carefully sorted. Pressing is carried out with whole bunches in a pneumatic press. After overnight settling in stainless steel tanks, the must begins alcoholic fermentation in barrels. Ageing takes place over a total period of 18 months on the lees: 12 months with 90% in wood (25% new oak and 65% second-fill barrels) and 10% in amphora, followed by 6 months in stainless steel tanks.
