Tasting
Appearance
With beautiful intensity, this red wine reveals a deep hue tending towards garnet, reflecting full maturity and remarkable concentration.
Nose
The bouquet opens with vibrant aromas of fresh red fruits, such as cherry and raspberry. It is then enriched with delicate spicy and woody notes, complemented by subtle mineral and earthy nuances.
Palate
The palate seduces with its silky tannins and a texture that combines density and freshness. The balance is remarkable, carried by a fine acidity that draws the wine towards a delicate, indulgent and slightly saline finish.
Food and wine pairings
This cuvée pairs wonderfully with roast poultry, white meats in creamy mushroom sauce, or delicate red meats such as a fillet of beef. It will also prove surprising alongside oily fish such as grilled salmon, vegetarian dishes with autumnal flavours, or a platter of aged cheeses.
Serving and cellaring
To fully appreciate this Bourgogne Pinot Noir 2023, it is advisable to serve it at a temperature between 14 and 16°C. Light decanting thirty to sixty minutes before tasting will help release all of its aromas. Approachable in its youth, this wine has fine ageing potential and can be cellared until around 2035.

The estate
Founded in 1951 by Louis Félix Picard with just two hectares, the family estate has experienced remarkable growth. Now led by Francine Picard, the property extends across prestigious terroirs in the Burgundy region of France. It was under her leadership that the Au Pied du Mont Chauve entity was born in the 2000s, a true showcase of the family's expertise. Deeply committed to respecting the environment, the property stands out for its biodynamic approach and its constant pursuit of precision, combining ancestral traditions with technical innovations.
The vineyard
Stretching across approximately 35 hectares in the heart of the Côte de Beaune, this Burgundy terroir benefits from a privileged south-east to south exposure, at an altitude ranging between 250 and 400 metres. The vines flourish on complex clay-limestone soils dating back to the Jurassic period. The estate favours biodynamic viticulture, encouraging natural grass cover, mechanical soil work and traditional single Guyot pruning to preserve the balance and biodiversity of each plot.
Vinification and ageing
The grapes destined for this Bourgogne Pinot Noir 2023 are hand-picked, meticulously sorted, then fully destemmed. Fermentation takes place in temperature-controlled open vats to encourage gentle extraction. The wine then benefits from fifteen months of ageing (55% in one-wine Burgundy barrels, 15% in foudres and 30% in stainless steel tanks).
