Description
Characteristics and tasting notes for the Omnia 2022 Rotem & Mounir Saouma
Tasting notes
Nose
This Rotem & Mounir Saouma Omnia Châteauneuf-du-Pape reveals a particularly engaging and fragrant nose, showcasing a complex bouquet blending aromas of ripe black cherry, red plum, and licorice, all enhanced by notes of exotic spice and garrigue.
Palate
The palate is seductive, with a magnificent texture and harmony. It unfolds flavors of fresh, crisp red fruit, supported by beautiful depth and mineral tension. Chalky tannins structure this juicy wine, which lingers on a precise finish.
Food and wine pairing
This Rotem & Mounir Saouma Omnia Châteauneuf-du-Pape pairs beautifully with a wide variety of dishes. In its youth, it enhances red meats, pork terrines, or recipes based on mushrooms such as porcini or truffles. With a few years of aging, it will pair perfectly with herb-roasted leg of lamb, wild boar stew, or duck. It also pairs very well with rich vegetarian dishes such as moussaka or confit sun-drenched vegetables, as well as with soft, bloomy-rind cheeses like Saint-Félicien.
Serving and aging
To unlock the full potential of this 2022 vintage, double-decanting before tasting is highly recommended to release the natural carbon dioxide. For a more evolved wine, decanting and serving at around 16°C is advised. This wine, built for aging, needs time to fully express itself and will reward patient enthusiasts with decades of evolution.
Other characteristics
This Rotem & Mounir Saouma Omnia Châteauneuf-du-Pape has an alcohol content of 14.5%. It is bottled by gravity, without any fining or filtration beforehand.
The authentic expression of a Châteauneuf-du-Pape terroir
The estate
Founded in 2009 in the Rhône Valley, the Rotem & Mounir Saouma estate (Lucien Le Moine in Burgundy) is run by Mounir Saouma and his wife Rotem Brakir. Drawing on his apprenticeship with Cistercian monks, Mounir instills a winemaking philosophy centered on minimal intervention. Rotem, with her agricultural and enological training, oversees operations. At the helm of a vineyard of around 15 hectares, the estate stands out for applying traditional Burgundian techniques to Rhône terroirs, creating wines of remarkable identity.
The vineyard
The grapes come from nine distinct plots spread across the five communes of the Châteauneuf-du-Pape appellation: Châteauneuf-du-Pape, Courthézon, Sorgues, Bédarrides, and Orange. The majority of the fruit comes from the prestigious Pignan lieu-dit, characterized by its sandy soils and cooler microclimate, which lends great elegance. The vineyard is farmed according to organic principles, with extremely low yields to ensure optimal concentration.
The vintage
2022 stands out for its exceptional climatic conditions. Marked by drought and intense heat, the season led to very low yields and particularly early harvests, beginning as early as August 24 for the red grapes. These conditions allowed for berries with balanced ripeness and outstanding quality.
Winemaking and aging
Vinification begins with an extended cold maceration lasting seven to eleven days, combining whole clusters and crushed grapes. Fermentation starts naturally through indigenous yeasts, with no punching down or pumping over. After pressing in small traditional vertical presses, the wine is aged for 24 months on its total lees, without racking. This aging takes place in a variety of vessels: demi-muids, large foudres, concrete tanks, and concrete eggs.
