Description
Characteristics and Tasting Tips for Parallèle 45 2025 by Paul Jaboulet-Aîné
Tasting
Appearance
This wine reveals a brilliant garnet-red colour, characteristic of Grenache Noir and Syrah blends from the Rhône Valley.
Nose
The nose opens with aromas of ripe red fruit, led by strawberry and raspberry, accompanied by floral notes and a touch of spice.
Palate
The palate is fresh and mouth-watering, supported by a fine balance and supple tannins, with a finish that prolongs the red fruit.
Food and Wine Pairings
This wine pairs beautifully with hard cheeses such as Beaufort, roast poultry or poultry in sauce, as well as slow-cooked meats such as duck confit. It also lends itself to lightly spiced cuisine, in a convivial and versatile spirit at the table.
Serving and Cellaring
We recommend serving this Parallèle 45 2025 at a temperature between 16 and 18 °C, in order to preserve the freshness of the fruit and the suppleness of the tannins.
A Red Côtes-du-Rhône Faithful to the Style of Maison Paul Jaboulet Aîné
The Estate
Founded in 1834 in Tain-l'Hermitage, in the heart of the northern Rhône Valley, Maison Paul Jaboulet-Aîné today cultivates approximately 125 hectares of vines, spread across northern grands crus and broader appellations. Since 2006, it has belonged to the Frey family, with Caroline Frey overseeing viticulture and oenology. The entire vineyard is farmed organically and biodynamically, with a focus on regenerating the soils. Renowned for its Hermitage crus, this iconic House of the Rhône Valley is also the creator of the Parallèle 45 cuvée, first produced in 1950.
The Vineyard
The vines used for this wine, approximately 40 years old, are planted in the Côtes du Rhône appellation, on clay-limestone soils and alluvial deposits made up of rounded pebbles. This soil type promotes good thermal regulation and natural drainage, while the deep clays ensure a steady water supply to the vines, contributing to even ripening of the grapes.
Winemaking and Ageing
The grape varieties that make up this Parallèle 45 2025 are vinified separately: the Grenache is co-fermented with the other varieties in the blend in order to fix colour and tannins, while the Syrah undergoes a separate maceration, with a gentle extraction of around three weeks. Ageing then continues for six months in stainless steel and truncated conical tanks, on fine lees, in order to soften the tannins while preserving the freshness of the fruit.
Grape Varieties
This blend brings together Grenache Noir and Syrah, complemented by Mourvèdre, Marselan and Carignan, varieties characteristic of the southern Rhône Valley.
