Tasting
Colour
The glass reveals an intense, luminous ruby red, while retaining a lovely translucency characteristic of its appellation.
Nose
The aromatic bouquet opens with dominant notes of red fruits, such as strawberry and raspberry, underscored by subtle spicy touches. With aeration, floral and mineral nuances come through to enrich this palette.
Palate
The attack is supple and rounded. The mid-palate reveals a lovely fruity concentration, perfectly balanced by a refreshing acidity. The tannins are fine and silky, leading to an elegant, persistent finish marked by mineral undertones and light oaky notes.
Food and wine pairing
This red wine pairs wonderfully with roasted poultry, grilled red meats without an overly pronounced sauce, or a fine charcuterie platter. It will also pair very well with mushroom dishes in cream sauce or with mildly spiced Asian cuisine.
Service and storage
For optimal tasting, it is recommended to serve this wine at a temperature between 15 and 16°C, ideally in wide-bowled glasses after a light aeration. Approachable in its youth, it can also be cellared and enjoyed until around 2030.
The elegance and precision of a red wine from Savigny-lès-Beaune
The estate
The estate's history began in 1945 when Raymond Javillier founded the family business in Meursault, in the heart of Burgundy. Taken over and modernised by Patrick Javillier in 1974, the estate now spans around 11 hectares spread across several prestigious villages of the Côte de Beaune. It is now the third generation, embodied by Marion Javillier, who leads the estate. Under her guidance, the domaine continues a philosophy respectful of the terroir, highlighting the unique expression of each climat.
The vineyard
This Savigny-Les-Beaune comes from carefully selected plots. Located on an alluvial cone, this terroir enjoys a lovely exposure. The soils here are shallow, composed of clay resting on a friable limestone substrate. These unique geological characteristics promote consistent grape ripening and give the wine its refined structure and fresh aromatic profile.
The vintage
The year 2022 began with a mild, dry winter, followed by early budding in April. May, particularly warm, accelerated flowering. Despite a very rainy June, the summer proved to be scorching, allowing for a swift veraison in mid-August. The warm, steady weather conditions at the end of the season provided ideal harvesting conditions, ensuring perfect sanitary condition and optimal ripeness of the berries.
Winemaking and aging
After manual harvesting in small crates, the grapes are sorted and destemmed. Fermentation begins with indigenous yeasts in temperature-controlled tanks. A maceration period of around fifteen days is carried out, including a cold phase as well as gentle punching down and pumping over for a delicate extraction. The wine is then transferred into French oak barrels for ageing of 10 to 12 months. Malolactic fermentation occurs naturally the following spring.
