Appearance
Beautifully limpid, this wine reveals a bright white hue.

Nose
The nose displays a lovely aromatic complexity, blending floral notes of hawthorn with hints of citrus, apple and lemongrass. Subtle nuances of almond, hazelnut and amber emerge, along with mineral and lactic accents.

Palate
On the palate, this wine combines freshness with fine concentration. The generous texture retains great finesse, while the minerality of the terroir expresses itself with clarity, offering a refined structure and remarkable balance.

Food and wine pairings

This wine pairs perfectly with grilled fish or fish in creamy sauce, shellfish such as lobster, as well as poultry in cream and mushroom sauce. It also makes a wonderful match for chicken curry with coconut milk or a hard cheese such as Comté.

Serving and cellaring

To fully appreciate this Puligny-Montrachet Village "Les Levrons" 2023, we recommend serving it at a temperature between 8 and 10°C, up to 14°C. It can be enjoyed from 2025 and will continue to evolve until around 2032.

The elegance and purity of a white wine from Puligny-Montrachet

The estate

Located in the heart of Meursault in Burgundy, the Patrick Javillier estate was truly founded in 1945 by Raymond Javillier. Following an expansion led by Patrick from 1974 onwards, the property now spans 11 hectares across the Côte de Beaune. Renowned for its mastery of Chardonnay, this Burgundian estate produces wines across the four levels of regional appellations. Today, the third generation runs the estate, with Marion Javillier in charge of the reds and marketing, and Pierre-Emmanuel Lamy overseeing the vines and white wines, thereby perpetuating a family expertise.

The vineyard

The historic parcel that produces this Puligny-Montrachet wine was planted in 1947. Facing south-east at an altitude of 230 metres, these old vines grow on a deep, poorly draining terroir composed of clay-limestone soils scattered with scree and alluvial deposits. This sector, whose name refers to the hares once abundant here, is particularly prone to frost, requiring constant attention. The quality of its vine stocks has even allowed some of them to be included in a conservation programme for the finest Burgundian plants.

The vintage

The 2023 vintage stood out for its warm temperatures, well above seasonal averages. The vegetative cycle was marked by a notable water deficit and strong phytosanitary pressure. However, welcome rainfall at the end of August allowed the berries to develop optimally. Finally, intense heat at the beginning of September completed the ripening process, offering fine harvest potential.

Winemaking and ageing

The grapes for this Puligny-Montrachet Village "Les Levrons" 2023 are harvested by hand. After careful pressing, the musts ferment in oak barrels through the action of indigenous yeasts. Ageing then continues in these same barrels for 17 to 18 months, with a suitable proportion of new oak and bâtonnage adjusted to the characteristics of the terroir. Bottling is carried out with minimal fining and filtration in order to preserve all the aromatic finesse.
