Food and wine pairings
This white wine pairs beautifully with firm-fleshed sea and river fish, crustaceans and shellfish. It also works very well with fine poultry served with a light sauce. Depending on its profile, it can also elevate blue-veined cheeses or lightly sweet desserts.
The singular expression of a white wine from Savennières-Coulée-de-Serrant
The estate
Located in France, in the Loire region, this family estate took its current form when it was founded in 1960 by Denise and Antoine Joly. It was then Nicolas Joly who left a profound mark on the identity of the property, becoming a pioneer of biodynamics in the early 1980s. Today, his daughter Virginie Joly heads the estate and continues this demanding philosophy. Spanning 15 hectares of vines, the estate is renowned worldwide for its approach, which respects all living things, and for its historic monopoly, producing wines of rare authenticity.
The vineyard
The exclusive terroir of the Savennières Coulée de Serrant appellation covers approximately 7 hectares of steep south- and south-east-facing slopes. Overlooking a small valley that leads down to the Loire, the vines flourish on soils made up of schist and quartz. Farmed biodynamically, the vineyard is grassed over and partly worked by horse to preserve the soil structure. The vines are on average between 35 and 40 years old, with some reaching 80 years. Replanting is carried out by massal selection from historic plant material dating back to the 1920s.
Vinification and ageing
To produce the Clos de la Coulée de Serrant 2024, the grapes are harvested by hand in successive passes spread over several weeks. In the cellar, a minimal-intervention philosophy prevails: fermentations start spontaneously thanks to indigenous yeasts, without chaptalisation or temperature control, and extend over several months. The wine is then aged for 6 to 8 months in oak barrels, with a very small proportion of new oak (around 5%), accompanied by rackings and lees stirring. A light pre-filtration precedes bottling.
