Vinification and ageing
Harvested when fully ripe, the grapes are completely destemmed. Vinification in concrete vats, with daily pumping over to encourage optimal extraction of colour and tannins. Exclusive use of the run-off juice. The wine is aged for 14 to 18 months in 225 litre barrels.
The colour is a deep red.
The nose combines spice, raspberry and violet with notes of black olive, tapenade and rosemary.
