Tasting

Appearance
In its youth, the wine displays a beautifully intense colour, revealing a deep ruby hue scattered with subtle violet highlights.

Nose
The aromatic bouquet stands out for its remarkable complexity, blending aromas of black fruits (black cherry, blackcurrant) with delicate floral notes reminiscent of violet and iris. The whole is underlined by a mineral, chalky thread, along with subtle hints of spices, undergrowth, fresh leather and cigar box.

Palate
With a medium to full body, the palate reveals remarkable fruity concentration (plum, blackberry, black cherry) supported by vibrant acidity. The tannins, well-defined and firm, provide a powdery, refined texture. The finish, long and persistent, evolves harmoniously on fruity, mineral and spicy notes.

Food and wine pairing

This great red wine pairs wonderfully with roasted feathered game (pheasant, duck), meats slow-cooked in wine sauce, or cuts of beef and lamb. It also perfectly accompanies well-aged cheeses of character, such as Époisses.

Serving and cellaring

To fully appreciate the Bonnes-Mares Grand cru "Dom. Louis Jadot" 2023 in its youth, generous decanting is recommended. Built for ageing, this wine will reveal all its complexity after long cellaring and can be kept until around 2043.

The elegance and complexity of a Burgundy Grand Cru

The estate

Founded in 1859, the Louis Jadot House is a true institution in Burgundy. Spanning a vineyard of more than 210 hectares, the estate has established itself through its minimally interventionist philosophy, aimed at expressing the purity of each terroir. Today, the property belongs to the Kopf family. Management is entrusted to Thomas Seiter as president, alongside Thibault Gagey as general manager and Frédéric Barnier as technical director. The house brilliantly combines winemaking tradition with adaptation to contemporary environmental challenges.

The vineyard

Bonnes-Mares is an illustrious grand cru located at the crossroads of the villages of Chambolle-Musigny and Morey-Saint-Denis. The estate's 0.27-hectare plot, acquired in 1985, has the distinctive feature of stretching from the bottom to the top of the slope. This unique location makes it possible to bring together the two types of soil characteristic of the appellation: the white soils (marls, clays and limestones) of the upper part, and the darker soils (gravels, limestones, clays and flint) at the foot of the slope. The vineyard is farmed according to the principles of organic agriculture.

The vintage

The 2023 season began with a rapid and even flowering in early June, followed by a relatively cool summer punctuated by a few storms. To manage potentially very high yields, rigorous disbudding and green harvesting were carried out. In early September, an extreme heatwave suddenly accelerated berry ripening. Fortunately, welcome rains during the second week of September helped preserve fine acidity and bring freshness to the grapes.

Vinification and ageing

The vinification of the Bonnes-Mares Grand cru "Dom. Louis Jadot" 2023 favours a natural approach with the use of indigenous yeasts and an extended maceration of three to four weeks to gently extract structure. Clarification is carried out through natural settling, with very light filtration only if necessary. Ageing takes place in oak barrels from the estate's own cooperage (Cadus), with a moderate proportion of new wood (20 to 30%) in order to preserve the authentic expression of the terroir.
