Characteristics and tasting notes of the 2025 Chablis Village by Louis Jadot

Tasting

Appearance
Displaying a pale yellow hue reminiscent of lemon or straw, this wine is illuminated by bright green highlights typical of its youth. The whole shines with remarkable clarity.

Nose
The bouquet opens with a lively burst of citrus, blending lemon and lime, accompanied by notes of white fruits such as green apple and pear. Delicate touches of white flowers intertwine with a pronounced minerality, evoking flint and oyster shell.

Palate
The attack is vivid and refreshing, driven by a linear acidity that structures the palate. The medium body and fine texture reveal flavours of citrus and white peach. The finish stretches out with impressive length on saline and mineral notes.

Food and wine pairings

This white wine pairs ideally with seafood, such as oysters, shellfish or salmon tartare. It also beautifully accompanies fresh goat cheeses, snails in parsley butter, as well as Asian-inspired dishes such as sushi or a Thai salad with grilled prawns.

Serving and cellaring

For an optimal tasting experience, it is recommended to serve it at a temperature between 10 and 12 °C, after a brief aeration of a few minutes in a medium-sized glass. This wine is best enjoyed in its youth for its freshness, but it can be drunk until around 2030.

A remarkably fresh white wine from Burgundy

The estate

Founded in 1859 in Beaune by Louis Henry Denis Jadot, the Maison Louis Jadot is a true institution in Burgundy, France. Today led by the Gagey family, the estate has been owned by the Kopf family since 1985. The domaine extends across more than 210 hectares of vines throughout the various Burgundy appellations. Renowned worldwide for its consistency and respect for terroirs, the house also stands out through a strong environmental commitment, certified High Environmental Value level 3 since 2019.

The vineyard

Located in the northernmost part of the region, the Chablis terroir is distinguished by its cool climate and its Jurassic-origin soils. The vines thrive on land composed of marls and limestones rich in marine fossils, giving the grapes a unique mineral identity and remarkable tension.

Vinification and ageing

To craft this wine, the House favours a minimal-intervention approach in order to preserve the purity of the fruit. Fermentations take place in stainless steel tanks or in neutral containers. The wine then benefits from a relatively short ageing on fine lees, with no significant use of new oak, thereby ensuring the aromatic typicity and freshness of the appellation.
