Nose
The aromatic bouquet opens with a beautiful citrus vivacity, blending lemon and lime, accompanied by notes of white peach. Interwoven are delicate floral touches reminiscent of acacia, hawthorn and honeysuckle, underpinned by a pronounced minerality evoking flint. With aeration, subtle brioche and buttery nuances emerge.

Palate
The attack is remarkably fresh, offering a silky texture. The mid-palate reveals a beautiful, fleshy richness, perfectly balanced by mineral tension and vibrant acidity. The finish lingers, leaving a persistent impression of citrus and mineral notes.

Food and wine pairing
This white wine pairs wonderfully with seafood such as oysters or pan-seared scallops. It also enhances delicate white meats, such as chicken in a creamy sauce, as well as vegetarian dishes like an asparagus risotto. When it comes to cheese, it pairs ideally with an aged goat cheese or a piece of Comté.

Service and storage

The estate
Once a resting place for pilgrims on their way to Santiago de Compostela, Domaine Saint-Jacques was officially established in its modern form in 1955 by Christophe-Amédée Grandmougin. Located in Rully, at the heart of the Côte Chalonnaise in Burgundy, France, the estate is home to thirteenth-century Romanesque cellars. Today, Christophe-Andrea Grandmougin, representing the third generation, has been at the helm of the estate since 2021. He continues a family tradition centered on respect for the terroir and sustainable farming practices, establishing the estate's production as a key reference within its appellation.

The vineyard
The vines dedicated to this cuvée flourish on the prestigious terroirs of Rully, particularly on the classified plots of Marissou and La Fosse. Facing south and southeast, the vineyard benefits from an altitude ranging between 230 and 300 metres, promoting optimal ripening of the grapes. The vines, averaging around forty years of age, are planted at high density on clay-limestone soils. The estate favours a sustainable environmental approach, forgoing herbicides in favour of mechanical soil management.

The vintage
The year 2023 was marked by warm summer conditions, judiciously offset by sufficient water reserves. This favourable weather allowed the growing cycle to proceed smoothly, guiding the grapes towards ideal ripeness while preserving a beautiful natural freshness.

Winemaking and aging
The harvest is carried out exclusively by hand, with rigorous sorting of the bunches. After gentle pressing and a brief maceration, the Rully 1er Cru "Stellaris Campus" Blanc 2023 is fermented jointly in stainless steel tanks and oak barrels. The wine is then aged for 18 months, split equally between oak and stainless steel, allowing it to undergo malolactic fermentation while preserving the purity of its aromas.
