Tasting notes

Colour
The colour reveals a deep, intensely saturated hue, characteristic of wines born under warm climates.

Nose
The aromatic bouquet opens with expressive notes of ripe red fruit and cherry, enhanced by spicy touches of black pepper. Subtle nuances of vanilla and stewed fruit round out the ensemble.

Palate
The palate offers a rich structure supported by remarkably fine, perfectly balanced tannins. The tasting reveals delicate earthy notes, true to its limestone terroir, before stretching into a beautifully persistent finish.

Food and wine pairing

This red wine pairs wonderfully with full-flavoured meats such as grilled leg of lamb, braised veal or roast duck. It will also enhance finely spiced Asian-inspired dishes, a truffled mushroom risotto, as well as platters of fine charcuterie and mature cheeses such as Comté.

The estate

Founded in 1971 by René Rostaing, Domaine Rostaing first made its name on the prestigious terroirs of the northern Rhône Valley. In the late 1990s, the family's quest for new horizons led them to the south of France, to the Languedoc, with the acquisition of the Puech Noble vineyard. Today, Pierre Rostaing heads the estate. He masterfully upholds the family philosophy, combining traditional methods with environmentally responsible farming to reveal the authenticity of each terroir.

The vineyard

Located in the Coteaux du Languedoc region, near Nîmes, the vineyard spans around ten hectares. The vines are planted on a limestone plateau covered with rolled pebbles. Rising to an altitude around 150 metres higher than neighbouring terroirs, this site benefits from a cooler microclimate that preserves the natural acidity of the grapes. The estate favours sustainable farming, with no synthetic fertilisers or herbicides, entirely manual harvesting and carefully controlled yields.

Winemaking and ageing

The making of Puech Noble 2022 relies on artisanal methods. Fermentation is triggered using indigenous yeasts, followed by a maceration of around eighteen days that allows for a gentle extraction of phenolic compounds while preserving aromatic freshness. Ageing then takes place in French oak barrels, with a very limited proportion of new wood, so as to let the fruit express itself fully.
