Tasting notes

Colour
The colour reveals a luminous, bright straw-gold hue, characteristic of extended aging under a veil of flor yeast.

Nose
Fine and powerful, the nose reveals citrus aromas accompanied by notes of walnut, dried fruits and curry. Touches of bitter almond, toasted spices, fenugreek and a subtle saline minerality complete this complex bouquet, enriched by a light rancio character typical of oxidative aging.

Palate
On the palate, this wine expresses aromas of candied citrus and walnut, carried by a remarkable acidity that maintains freshness and definition. The whole seduces with its finesse and precision, offering exceptional length.

Food and wine pairing
This Savagnin pairs ideally with creamy, curry-spiced sauces, white meats, fish and regional cheeses. It goes particularly well with morel mushroom dishes, Comté aged 36 months or more, and poultry in cream sauce.

Service and storage
The Savagnin 2019 is best enjoyed at a temperature between 12 and 14°C. Opening the bottle two hours before serving allows the wine to fully reveal its aromatic complexity. This wine can be enjoyed now and up until around 2060.

A Jura Savagnin aged under a veil of flor yeast for five years at Domaine Pignier

The estate
Acquired by the Pignier family in 1794, Domaine Pignier carries on eight generations of winemaking expertise in the village of Montaigu, at the heart of the Jura. Now run by Jean-Étienne, Antoine and Marie-Florence Pignier, joined by Thibaut representing the eighth generation, the estate cultivates around 13 hectares of vines under Demeter-certified biodynamic farming since 2003. The only professional wine-growing estate in Montaigu, the property stands out for its philosophy as an exclusive winegrower, marketing only wines made from its own grapes. The thirteenth-century Gothic cellars, built by Carthusian monks, still house the aging of the wines today.

The vineyard
This Côtes du Jura wine comes from around three hectares of Savagnin grown in the Reculée du Val de Vallière. The vines flourish on blue and black flaky Lias clay-marl soils, at altitudes ranging between 250 and 400 metres. The plots benefit from south and south-west exposures within the reculées, these characteristic blind valleys of the Jura that create a favourable microclimate. The vineyard is farmed biodynamically with meticulous attention paid to soil health and surrounding biodiversity.

The vintage
The year 2019 in the Jura began with a mild, dry winter, followed by a hoarfrost episode on 6 May that threatened the buds. The summer was marked by high temperatures and a few hailstorms in the region. Despite these climatic challenges, the manual harvest carried out on 18 September 2019 yielded grapes of remarkable quality, combining optimal ripeness and balance.

Winemaking and aging
The grapes for the Savagnin 2019 are hand-harvested with selective sorting in the vineyard, then transported in small crates to the winery. Fermentation takes place with indigenous yeasts. After slow pressing that preserves the fine lees, the wine is aged for 60 months in oak barrels using the non-topped-up method, allowing a veil of yeast to develop on the surface of the wine. This traditional Jura technique, carried out in cool cellars maintained at around 13°C, gives the wine its characteristic oxidative aromas while preserving its freshness.
