Tasting notes
Colour
The colour reveals a pale gold hue, almost white, illuminated by subtle golden reflections. The effervescence stands out through a fine, delicate mousse and persistent bubbles.
Nose
The bouquet opens with aromas of fresh white fruits such as green apple and pear. With aeration, it gains complexity, revealing gourmand notes of brioche, hazelnut butter and dried fruits, enhanced by a touch of citrus reminiscent of lemon curd and subtle floral nuances.
Palate
The attack is lively and incisive, carried by a lovely mineral tension. The palate offers an elegant, delicate texture, where the grape variety's natural roundness balances the freshness. The mid-palate unfolds savoury flavours of yeast and nuts, extending into a long, persistent and subtly saline finish.
Food and wine pairing
Ideal as an aperitif, this wine pairs wonderfully with oysters or a seafood platter, whose salinity echoes its minerality. It also pairs elegantly with delicate white fish such as grilled plaice, light poultry dishes, vegetable-based dishes, or, more boldly, waffles.

The estate
Founded in the 13th century by Carthusian monks, Domaine Pignier is a historic figure of the Jura, in France, located in the village of Montaigu. Acquired by the Pignier family in 1794 during the French Revolution, this 13-hectare vineyard is now run by the seventh generation, represented by siblings Jean-Étienne, Antoine and Marie-Florence, joined in 2020 by Thibaut, embodying the eighth generation. Certified biodynamic since 2003, the estate stands out for its respectful approach to living ecosystems and its artisanal philosophy, producing authentic wines exclusively from its own vines.
The vineyard
The Crémant du Jura comes from plots located on the south-facing slopes of the Val de Sorne reculée, in Montaigu. The vines flourish on complex soils composed of variegated clay marls from the Keuper and calcareous deposits from the Triassic period, rich in marine fossils. This terroir benefits from a favourable microclimate and rich biodiversity, maintained through holistic farming practices and the cultivation of cover crops, thereby fostering soil vitality and ecosystem balance in this region of the Jura.
Winemaking and ageing
The grapes are harvested by hand, with a meticulous berry-by-berry sorting process. The base wine ferments using indigenous yeasts, followed by ageing for at least 12 months in large wooden vessels. The second fermentation of the Crémant du Jura "L'Autre" Brut Nature NM follows the traditional method, using a liqueur de tirage made from the must of the same harvest, without the addition of commercial yeasts or refined sugar. The wine then ages on the lees for 30 to 36 months before being disgorged with no dosage added. The bottle is sealed with a fire-branded natural cork stopper.
