Tasting notes

Colour
The glass reveals a pale hue, enhanced by very subtle golden glints.

Nose
The nose opens elegantly with aromas of ripe citrus fruits such as fresh lemon and white grapefruit. It then evolves towards notes of crisp white apple and melon, complemented by delicate floral touches and a subtle mineral, chalky undertone.

Palate
On the palate, the wine offers a taut, elegant texture, underpinned by lovely liveliness and perfectly integrated acidity. Barrel ageing brings a harmonious volume without heaviness. The finish stands out for its precision and remarkable saline persistence.

Food and wine pairing

This white wine pairs wonderfully with rich fish such as salmon or tuna, as well as with seafood and scallops. It also goes very well with pan-seared white meats, roast poultry in cream sauce, mushroom risotto, or dishes seasoned with fine herbs. On the cheese side, it enhances aged hard cheeses and mild cheeses beautifully.

The precision and freshness of a white wine from Domaine Lejeune

The estate

Founded in 1793 following the acquisition of ecclesiastical property, Domaine Lejeune is a historic estate located in the heart of Burgundy, in the village of Pommard. Traditionally passed down through the women of the family over several generations, the estate underwent a major turning point in 2023. It is now run by Louis de Belleroche, supported by the Rerolle family, the current owners. The vineyard, spanning 8.7 hectares, is cultivated according to the principles of organic and biodynamic farming, reflecting a strong commitment to respecting the terroirs and the environment.

The vineyard

Located in the commune of Pommard, this vineyard in Burgundy benefits from an ideal south-east-facing exposure. The vines, averaging forty to fifty years old, thrive on soils made up of limestone and silt, resting on a chalky bedrock. The estate is certified in organic conversion and applies biodynamic methods to preserve the vitality of the soil and the vine. The harvest is carried out entirely by hand to ensure a rigorous selection of the grapes.

Winemaking and ageing

The Bourgogne Blanc "Les Grandes Carelles" 2023 is crafted using a traditional method known as "à la Meursault". After settling in tank, the must is transferred directly into 228-litre oak barrels for alcoholic fermentation, allowing precise temperature control. The wine is then aged in barrel for twelve to fourteen months, with no racking, to maximise its aromatic potential through contact with the lees. Bottling is carried out entirely on the estate.
