Characteristics and Tasting Notes for 100 Phrases pour Éventails 2022
Tasting
Colour
The colour reveals a violet hue with brilliant ruby highlights, echoing the aesthetic of great wines with a very slight evolution at the rim.
Nose
Displaying great elegance, the aromatic bouquet reveals subtle notes of violet intertwined with black fruit aromas, particularly ripe cherry. The whole is underscored by fine, delicate oak notes, along with mineral and spicy touches.
Palate
The delicate, fruit-driven attack gives way to a palate of beautiful complexity. The texture is built on fine, silky, and velvety tannins. The remarkably long finish retains a lovely freshness supported by an underlying minerality.
Food and wine pairing
The estate recommends pairing this wine with a lièvre à la royale. It will also pair wonderfully with roasted poultry in mushroom or truffle sauce, game meats, as well as aged hard cheeses.
Service and storage
This 2022 vintage can be enjoyed now and will reach its peak between 2026 and 2032. It has the ageing potential to evolve until around 2040.
The distinctive expression of Domaine du Clos des Fées at the heart of the Roussillon terroir
The estate
Founded in 1998 by Hervé and Claudine Bizeul, Domaine du Clos des Fées is located in Vingrau. Starting out with very limited resources, the estate now spans around thirty hectares of vines spread across more than a hundred plots. Recognised for its respectful approach to biodiversity and its philosophy of minimal intervention, the estate is renowned for producing wines of great quality that faithfully reflect the complexity of their terroirs of origin.
The vineyard
This wine comes from the IGP Côtes Catalanes appellation. The vines, facing north and northeast, grow on clay-limestone soils. This distinctive terroir, swept by the tramontane wind, helps preserve the freshness and acidity of the berries while ensuring optimal ripeness in the face of the Mediterranean climate.
The vintage
2022 was marked by intense summer heat and very low rainfall between June and October. The constant presence of the tramontane wind subjected the vines to natural stress, forcing the roots to dig deep into the soil, which encouraged a beautiful concentration in the berries while preserving their balance.
Winemaking and ageing
The winemaking process follows a philosophy of non-intervention. The grapes are harvested in whole bunches. Fermentation, punctuated by manual punching down, along with malolactic fermentation, takes place entirely in new French oak demi-muids.
Grape variety
Pinot Noir (100%).
