Tasting Notes
Appearance
The wine reveals an elegant pale gold hue, enhanced by brilliant silvery highlights.
Nose
Wonderfully pure, the nose exudes delicate aromas of white flowers and white-fleshed fruits, such as pear, harmoniously rounded out by subtle notes of fresh almond.
Palate
Beautifully balancing freshness and roundness, the palate seduces with its silky texture. The wine unfolds with elegance toward a lingering finish, marked by a lovely saline tension.
Food and Wine Pairing
This gastronomic white wine pairs perfectly with refined starters such as artichokes vinaigrette or goat cheese with almonds. It also beautifully complements poultry dishes, fish such as marinated sardines (escabèche), as well as aged sheep's milk cheeses or lightly sweetened fruit desserts.
Serving and Cellaring
To fully appreciate the Montagny 1er Cru "Les Combes" 2021, it is recommended to serve it at 12°C. This age-worthy wine can be enjoyed now, but it will continue to develop its complexity in the bottle until around 2031.
The Freshness and Complexity of a Premier Cru from the Côte Chalonnaise
The Estate
Founded around 1120-1130 by Cistercian monks, Domaine du Cellier aux Moines is one of the oldest vineyards in Burgundy. Located in Givry, this historic estate has undergone a true renaissance since its acquisition in 2004 by Philippe and Catherine Pascal, the current owners. With a 12-hectare vineyard farmed biodynamically, the estate stands out for its cellar, listed as a Historic Monument, and its ultra-modern gravity-flow winery. Combining centuries-old heritage with high-precision viticulture, the Pascal family crafts wines renowned for their finesse and the authentic expression of their terroirs.
The Vineyard
This cuvée comes from the "Les Combes" climat, a 0.7-hectare plot located within the Montagny appellation. Planted in 2012, these vines thrive on a south-facing slope at an altitude of between 270 and 310 meters. This distinctive terroir rests on clay-limestone soils scattered with oolitic pebbles, ensuring excellent drainage and lending the wine a mineral dimension. The entire vineyard is carefully cultivated according to biodynamic principles, certified organic since 2020 and Biodyvin-certified since 2023.
Winemaking and Aging
The making of the Montagny 1er Cru "Les Combes" 2021 begins with meticulous hand-harvesting. The grapes are then gently pressed to preserve the full purity of the juice. Thanks to a four-level gravity-flow winery, mechanical intervention is kept to a minimum. Fermentation takes place in oak barrels, followed by careful aging on fine lees for twelve months, giving the wine its silky texture and aromatic complexity.
