Appearance
Deep ruby, sometimes tinged with purple or violet highlights, this wine reflects the beautiful concentration characteristic of the Pinot Noir from Clos des Mortières.
Nose
The nose unfolds in a register of red and dark fruits, cherry, morello cherry and blackcurrant, often enhanced by floral notes of violet, fine spices and, depending on the vintage, delicately integrated smoky or oaky nuances.
Palate
The palate is full and elegant, underpinned by fine, silky tannins, lovely freshness and a long finish, often marked by spicy, peppery lingering notes.
Food and Wine Pairing
This wine pairs beautifully with grilled or sauced red meats, roast or braised poultry, traditional Burgundian dishes and soft-rind cheeses.
Serving and Cellaring
The Givry Village "Clos des Mortières" 2025 is best served between 16 and 18°C. It has the structure needed to evolve favourably over several years after bottling.
Clos des Mortières, a Givry Village Shaped by a Monopole Terroir
The Estate
Domaine de la Ferté, founded in 1995 by Bertrand Devillard, is now run by Amaury Devillard. Located in Burgundy, in the Givry appellation of the Côte Chalonnaise, this estate of approximately 6 hectares sits on a terroir whose winegrowing heritage dates back to the Cistercian abbey of La Ferté, founded in 1113. Specialising exclusively in Pinot Noir and certified High Environmental Value (Haute Valeur Environnementale), it belongs to the Domaines Devillard group, which brings together several renowned Burgundian estates.
The Vineyard
Clos des Mortières is a 1.71-hectare monopole located in the Givry appellation, at an altitude of between 240 and 280 metres, with east-south-east and south-south-east exposures. The vines, planted in 1960, 1993 and then 2016, have an average age of around 30 years. The soils are a mix of clay and silt on the upper part of the clos, and sand on the lower part, offering a diversity of soil types that enriches the wine's complexity.
Vinification and Ageing
The Givry Village "Clos des Mortières" 2025 is made from hand-harvested grapes that are then carefully sorted. Vinification takes place in open vats with regular pigeage (punching down) and native yeasts, followed by complete malolactic fermentation. Ageing takes place in 228-litre Burgundy barrels with a measured proportion of new oak, followed by a period in stainless steel tanks before bottling.
