Palate
The attack is lively and wonderfully fresh, supported by crisp, precise acidity. The palate offers beautiful mineral tension with flinty accents, harmoniously balanced by skilled aging that lends discreet buttery and vanilla nuances. The remarkably pure finish lingers on persistent citrus notes.
Food and Wine Pairing
This wine pairs wonderfully with fine fish such as turbot with beurre blanc, seafood like a scallop risotto, or poultry and white meats in cream sauce. It also beautifully complements goat cheeses, blue-veined cheeses such as Bleu de Bresse, as well as aged hard cheeses like Comté, Beaufort or Gruyère.
Service and Storage
To fully appreciate the Saint-Véran Village "En Faux" 2023, it is recommended to serve it between 11 and 13°C, straight from the bottle without prior decanting. This vintage can be enjoyed now and will continue to evolve favourably until around 2030, with a peak drinking window expected between 2025 and 2028.

The Pure, Mineral Expression of a White Wine from the Mâconnais
The Estate
Founded in 1945 in the village of Fuissé, in Burgundy, Domaine Cordier Père et Fils has established itself as an essential reference in the Mâconnais. Now run by Christophe Cordier, who took over management in 1987, the estate spans some thirty hectares across more than a hundred parcels. Driven by an exacting philosophy and a biodynamic approach, the current owner showcases the diversity of the terroirs to craft wines of remarkable precision, true to the authenticity of their soils.
The Vineyard
The "En Faux" climat of the Saint-Véran appellation is located at an altitude of around three hundred metres, on the south-facing slope of Mont de Pouilly. The vines, aged forty to fifty years, thrive on clay-limestone topsoil resting on a bedrock of hard limestone rich in red crinoid fossils. This distinctive geology, particularly rich in iron oxide, gives the wine its unique mineral signature. The vineyard is managed with very limited yields and short Guyot pruning to concentrate the quality of the berries.
Winemaking and Aging
The grapes for the Saint-Véran Village "En Faux" 2023 are hand-harvested at optimal physiological ripeness, then gently pressed as whole clusters. The must is transferred by gravity for fermentation in oak barrels, carried out exclusively with indigenous yeasts. The wine is aged on total lees for twelve months in three-hundred-and-fifty-litre oak barrels, followed by six months in stainless steel tanks. Bottling is done by gravity, without fining and with very light filtration.
