Tasting
Appearance
The colour reveals a beautiful pale golden yellow, adorned with subtle green highlights in its youth.
Nose
Complex and expressive, the nose exudes generous aromas of ripe stone fruits such as peach and apricot, intertwined with citrus notes like orange zest. Delicate touches of white flowers and nuts are woven together with fine, precise oak.
Palate
The attack is fresh and vibrant, opening onto a full and round texture. The palate is structured by a remarkable ferruginous mineral tension that perfectly balances the fruity richness. The finish, of great purity, lingers long and elegant.
Food and Wine Pairing
This white wine pairs wonderfully with roasted or grilled fine fish, pan-seared scallops, or poultry in a creamy mushroom sauce. It will also beautifully complement hard cheeses such as a young Comté or Beaufort.
Serving and Cellaring
For optimal tasting, this wine should be served at a temperature between 11 and 13°C. It can be enjoyed in its youth for its bright fruitiness, but has the structure needed to age favourably in the cellar until around 2032.
The Elegance and Mineral Tension of a Great Saint-Véran White Wine
The Estate
Founded in 1945 and located in the village of Fuissé, at the heart of the Mâconnais in France, Domaine Cordier Père et Fils is an essential reference in Burgundy. Now run by Christophe Cordier, this family estate oversees a vineyard of 31.5 hectares spread across more than 120 plots. Dedicated exclusively to Chardonnay, the estate stands out for its meticulous plot-by-plot approach, its gravity-flow cellars, and its commitment to producing wines of great purity, often compared to the region's most prestigious crus.
The Vineyard
The "En Faux" climat is a distinctive terroir within the Saint-Véran appellation, located near Chasselas at an altitude of around 300 metres. Facing due south, the 40- to 50-year-old vines thrive on clay-limestone soils rich in iron oxides, giving the wine a unique mineral identity. The vineyard is managed with great rigour, certified organic and biodynamic. Short Guyot pruning and limited yields ensure optimal grape concentration.
Winemaking and Ageing
The grapes are hand-harvested at full ripeness. After a gentle pressing of whole clusters, the juices are transferred to barrel by gravity. Fermentation occurs naturally through indigenous yeasts. Ageing takes place on full original lees for 12 months in 350-litre French oak barrels with custom toasting, followed by 6 months of resting in stainless steel tanks. Bottling is done by gravity, without fining and with only very light filtration.
