Description
Characteristics and tasting tips for Château Haut-Bailly 1986
Tasting
Appearance
This red wine displays a deep ruby hue shading towards garnet, with brick-red highlights at the rim of the glass.
Nose
The bouquet is complex and evolved, dominated by tertiary notes. It offers aromas of blackcurrant, blackberry and cedar, harmoniously intertwined with hints of graphite, tobacco, leather and smoky wood.
Palate
Medium-bodied, the palate has a supple, velvety texture. It unfolds a lovely fruity richness underpinned by silky tannins, stretching into a smooth, harmonious finish with nuances of blackcurrant pastille and sweet spices.
Food and wine pairings
This fine, mature wine pairs beautifully with flavourful meats such as dry-aged rib of beef, roast rack of lamb or duck breast with porcini mushrooms. It will also enhance delicate game such as pigeon or venison, as well as slow-cooked dishes in mild sauces.
The elegance and richness of a great Pessac-Léognan wine
The estate
Winegrowing on the site dates back to the Middle Ages, but the estate was truly founded in 1630 by Parisian bankers. Located in the Bordeaux region, Château Haut-Bailly now covers 39 hectares. Managed by Véronique Sanders and chaired by Christopher Wilmers, who represents the current owning family, the estate stands out for its ongoing pursuit of innovation and respect for the environment. Unusually, this Grand Cru Classé de Graves is dedicated exclusively to red wines, combining power, finesse and remarkable consistency.
The vineyard
Set on one of the highest points of the Pessac-Léognan appellation, the terroir consists of a complex mosaic of gravel, sand and clay overlying a subsoil rich in marine fossils. The estate is home to an exceptional plant heritage, including a plot of century-old vines planted in the early 20th century. Committed to HVE 3-certified sustainable viticulture, the team uses no herbicides and incorporates modern technologies, such as robotics, to preserve biodiversity and soil vitality.
The vintage
1986 was marked by challenging weather conditions. After a difficult spring that led to late budbreak, the vines benefited from an exceptionally hot and sunny summer. The particularly dry harvest period allowed the grapes to reach optimal ripeness, yielding rich, concentrated fruit that was ideal for crafting a wine with great ageing potential.
Vinification and ageing
Following an entirely manual harvest, the grapes undergo precise plot-by-plot vinification in concrete and stainless steel vats. Château Haut-Bailly 1986 was then aged in French oak barrels, 50 to 65% of them new, for 15 to 18 months, in order to refine the tannic structure without masking the expression of the terroir.
Grape variety
100% Cabernet Sauvignon.
