Tasting notes

Appearance
This cuvée displays a pale yellow colour with bright green hues, both brilliant and clear.

Nose
The bouquet is precise and expressive, releasing aromas of crisp white fruits such as fresh pear and peach, intertwined with notes of citrus and lemon zest. With aeration, subtle touches of aniseed and sweet liquorice emerge, along with a delicate smoky trace typical of its terroir.

Palate
The attack is bright and dynamic, opening onto a full and concentrated mid-palate. The palate echoes the fruit perceived on the nose, supported by lovely vibrancy and an enveloping texture, before stretching into a persistent, balanced and deeply saline finish.

Food and wine pairings

This white wine pairs beautifully with refined seafood such as crayfish, spiny lobster or smoked salmon. It will also go very well with delicate white fish or local goat's cheeses.

Serving and cellaring

For optimal enjoyment, this wine should be served at a temperature between 10 and 12°C. While it can be enjoyed young, it also boasts excellent ageing potential and will continue to develop favourably in the cellar until around 2032.

The estate

Located in France in the Loire Valley, Château de Tracy's vineyard was structured into its current form at the end of the 19th century, although vine cultivation has been documented on the estate since 1396. This 33-hectare vineyard has belonged to the same family since 1586 and is now run by Juliette d'Estutt d'Assay. Deeply committed to preserving its ecosystem, the estate is HVE Level 3 certified and farmed biodynamically and organically, giving rise to cuvées of remarkable purity.

The vineyard

The vineyard extends over south-west-facing slopes overlooking the river, to the north of the Pouilly-Fumé appellation. The vines, aged between 40 and 70 years, benefit from a particularly high planting density, unique in the region. They are rooted in two complementary terroirs: flinty clays that bring tension and minerality, and Kimmeridgian limestone rich in tiny fossilised oysters, lending volume and salinity. The entire vineyard is farmed without any synthetic products, in the greatest respect for biodiversity and soil health.

The vintage

The 2025 vintage is characterised by a sun-drenched profile, offering optimal ripening conditions. These climatic conditions resulted in perfectly ripe grapes, preserving a beautiful natural balance.

Winemaking and ageing

Following manual harvesting and rigorous sorting, the grapes are vinified using traditional methods. Fermentation takes place in temperature-controlled stainless steel and concrete vats to preserve the fruit's aromatic purity. The wine is then aged for an extended period on fine lees, with regular lees stirring (bâtonnage) lasting up to eight months, before undergoing a very light fining and filtration to retain all of its texture.
