Tasting

Appearance
Largillier Rosé displays a pink hue of marked intensity, a direct result of the saignée method, which allows a generous extraction of colour from the Pinot Noir. This deep shade is matched by a lively effervescence, animated by fine bubbles that attest to extended ageing on the lees.

Nose
The nose opens on a register of tangy red fruit, with hints of cranberry and wild cherry that reflect the freshness and directness of the Pinot Noir from the Matière sub-plot.

Palate
On the palate, this rosé champagne reveals an energetic attack, carried by fresh acidity and well-integrated phenolic notes. The body is present without heaviness, offering a firm structure combined with a succulence that invites you to enjoy it with a meal rather than reserving it for the aperitif alone.

Food and wine pairings
Largillier Rosé lends itself to a variety of gastronomic pairings: spiny lobster, stuffed capon, salmon or even Chaource cheese all complement its structure. Its vinosity also allows it to accompany an entire meal, from briny dishes to richer preparations.

A saignée rosé champagne born of the Largillier monopole in Ville-sur-Arce

The estate
Founded in 2006 by Jérôme Coessens, Maison Coessens is based in Ville-sur-Arce, in the Côte des Bar, the southern sub-region of Champagne. The estate is built around the Largillier monopole, a Pinot Noir plot owned entirely by the family for several generations. Now run by Jérôme Coessens, the estate has had its vineyard certified organic since 2021, and stands out for its precise, plot-by-plot approach, which showcases the different geological facets of Largillier.

The vineyard
Largillier Rosé comes from the Matière sub-plot, located on the eastern part of the Largillier lieu-dit, a monopole of approximately 6.5 hectares planted exclusively with Pinot Noir. The soils are composed of clay-limestone and Kimmeridgian marl, an emblematic subsoil of Champagne, with a clay content of between 25 and 35%, comparable to that of Chablis. The vines, with an average age of 35 to 40 years, are managed using practices that encourage deep rooting, with ploughing under the vine row and grass cover between the rows.

The blend
Largillier Rosé is a non-vintage champagne, produced only in years when the grapes from the Matière sub-plot reach what is judged to be optimal phenolic ripeness. This rigorous selection limits production of the cuvée to certain vintages only, reinforcing its rarity within the estate's range.

Vinification and ageing
Largillier Rosé is made by foot-treading the Pinot Noir grapes, followed by a maceration of approximately 24 hours, which extracts the colour and phenolic material needed for this style of saignée rosé. Alcoholic fermentation takes place in tank to preserve the purity of the fruit, and malolactic fermentation is carried out to bring roundness and freshness. The wine then benefits from extended ageing on the lees, which contributes to its aromatic complexity and to the integration of the mousse before bottling.
