Description
## Tasting Notes and Advice for Pommard 1er Cru "Les Pézerolles" 2018 from Bouchard Père & Fils
**Tasting**
*Appearance*
The colour reveals a beautiful red hue, ranging from a vivid ruby to a deeper shade with subtle garnet highlights. *Nose*
The aromatic bouquet reveals great complexity. It exudes scents of ripe red and black fruits such as black cherry, raspberry and blackcurrant. This fruity ensemble is enriched with spicy notes of cinnamon and clove, hints of liquorice and mocha, as well as mineral and floral nuances reminiscent of violet. *Palate*
The attack offers a smooth, creamy texture that evolves into a more structured mid-palate. Carried by lovely freshness and firm, noble tannins, this wine displays remarkable balance. The finish lingers long on mineral and spicy notes. **Serving and cellaring** With its solid structure, this Pommard 1er Cru "Les Pézerolles" 2018 boasts excellent cellaring potential. While it will need a few years in bottle to soften its tannins, it can develop favourably in the cellar for a decade or more, gradually revealing complex tertiary aromas. ## The Elegance and Structure of a Pommard Premier Cru **The estate** Founded in 1731 as a wine merchant house, Bouchard Père & Fils truly saw its vineyard estate come to life in 1775. Historically rooted at the Château de Beaune in Burgundy, the estate is now owned by the Artémis Domaines group. A pioneer in environmental preservation, the house has committed to organic viticulture and has achieved HVE3 certification. With an exceptional heritage of Premier and Grand Cru climats, Bouchard Père & Fils stands out for its ability to blend centuries-old tradition with agroecological innovation, expressing the full richness of Burgundy's terroirs. **The vineyard** The "Les Pézerolles" climat is a prestigious Premier Cru located within the Pommard appellation, in the heart of the Côte de Beaune. The vines thrive on brown soils particularly rich in clay, giving the wine its characteristic power. The vineyard is managed according to environmentally friendly practices, promoting biodiversity as part of an overall organic farming approach. **Winemaking and ageing** To craft this Pommard 1er Cru "Les Pézerolles" 2018, the grapes undergo rigorous sorting to retain only perfectly healthy berries. The house favours gentle extraction, in the form of a light infusion, coupled with delicate pressing to preserve the purity of the fruit. The winemaking process includes a measured proportion of whole clusters, around 15%, adding extra aromatic complexity. The wine is then carefully aged in oak barrels to refine its tannic structure. **Grape variety** Pinot Noir (100%).
