Tasting notes
Nose
The aromatic bouquet stands out with its delicate floral profile, accompanied by vegetal notes reminiscent of fresh foliage. A touch of gunflint underlines the mineral identity of its terroir.
Palate
Remarkably pure, the palate reveals itself as particularly taut, stretching out with impressive length. Free of any heaviness, the tasting concludes on a floral finish enriched with delicious notes of hazelnut and dried fruit.
Food and wine pairings
This great white wine pairs wonderfully with seafood, such as white-fleshed fish or noble shellfish like a finely prepared spiny lobster. It also pairs beautifully with white meats in sauce or roasted, as well as with strongly flavoured cheeses.
Serving and cellaring
The Chablis Grand Cru "Les Preuses" Dom. Long-Depaquit 2023 is best enjoyed served at a temperature between 11 and 13°C. While it can be drunk young, it also boasts excellent ageing potential, allowing it to be kept until around 2033. Over time, it will develop a more intense minerality along with tertiary aromas of undergrowth and mushroom.

The estate
Founded in 1831, the House of Albert Bichot is an emblematic figure of Burgundy. Now led by Albéric Bichot, representing the sixth generation, this family-owned estate manages a vast vineyard of more than 100 hectares spread across six prestigious domaines. Renowned for its environmental commitment, the House stands out for its sustainable viticulture and a substantial range of certified organic wines. The Domaine Long-Depaquit, acquired in 1968, is the jewel of the House's holdings in Chablis.
The vineyard
This cuvée comes from a micro-plot of 0.25 hectares located at the edge of the climat, very close to La Moutonne, within the Chablis appellation. The vines thrive on Kimmeridgian clay soil covered with numerous stones. The high planting density, set at 8,500 vines per hectare, encourages competition between the vines, thereby promoting optimal grape concentration. The name of this terroir is said to derive from the term "perreuse", referring to the old paved Roman road that once crossed the region.
Winemaking and ageing
Following an entirely hand-harvested crop, the grapes undergo gentle pressing. The fermentation and ageing of the Chablis Grand Cru "Les Preuses" Dom. Long-Depaquit 2023 take place entirely in oak barrels, one to five years old, for ten months. The wine is then refined for a further six months in stainless steel tanks. This entire process is carried out on fine lees to preserve freshness and add complexity.
