Tasting

Appearance
Pale gold with green highlights in its youth, evolving towards more golden hues over the years.

Nose
Delicate, it reveals floral aromas and scents of fresh foliage, all underscored by mineral notes reminiscent of gunflint.

Palate
Free of any heaviness, it offers an attack of great purity. The structure is taut, long and delicate, extending towards a persistent finish marked by floral touches, hazelnut and dried fruit.

Food and Wine Pairing
This great white wine pairs perfectly with seafood, such as white fish and shellfish. It also goes wonderfully with white meats, poultry and characterful cheeses.

Serving and Ageing
It is recommended to serve the Chablis Grand Cru "Les Preuses" Dom. Long-Depaquit 2022 at a temperature between 11 and 13°C. It can be enjoyed in its youth to appreciate its freshness, or cellared until around 2032. Over time, it will develop increased minerality along with tertiary aromas of undergrowth and mushroom.

The Elegance and Minerality of a Chablis Grand Cru from Albert Bichot

The Estate
Founded in 1831 in Monthélie by Bernard Bichot, the Albert Bichot house is a historic institution in Burgundy. Now led by Albéric Bichot, representing the sixth generation, the family estate stands out for its strong commitment to organic viticulture. Based in Beaune, this renowned brand shines through six wholly owned estates, totalling more than 100 hectares of vines. Combining respect for terroir with modernity, the house is also celebrated for its role as a key buyer at the prestigious Hospices de Beaune auction.

The Vineyard
The small 0.25-hectare plot is located on the "Les Preuses" climat, whose name is said to refer to the old paved Roman road ("perreuse") that once linked Chablis to Maligny. The vines, averaging around ten years old, are planted at a density of 8,500 vines per hectare. They thrive on a soil composed of clay and numerous stones. The entire estate is farmed according to the principles of organic agriculture.

Winemaking and Ageing
Following a hand-picked harvest, the Chablis Grand Cru "Les Preuses" Dom. Long-Depaquit 2022 is entirely vinified in oak barrels that have previously held between one and five wines. Ageing takes place on fine lees for 10 months in barrels, followed by 6 months of refinement in stainless steel tanks.
