This Chablis Grand Cru pairs perfectly with noble fish and finely prepared shellfish such as lobster or spiny lobster. It also brilliantly accompanies poultry and white meats, whether roasted or served in sauce. The estate particularly recommends a sea bream fillet in vanilla butter.
Service and storage
The Chablis Grand cru "Bougros" Domaine Long-Depaquit 2020 is ideally served at a temperature between 12 and 14°C. It can be enjoyed in its youth or cellared until around 2030, or even longer.

The estate
Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot House embodies nearly two centuries of winemaking excellence in Burgundy. Today, under the management of Albéric Bichot, it brings together six estates spread across the entire region, covering a total of over 100 hectares of vineyards, including 13 hectares of Grands Crus and 26 hectares of Premiers Crus. Based in Beaune, the House distinguishes itself by its pioneering commitment to converting its Côte d'Or vineyards to organic farming and offers the most extensive portfolio of organic wines among the Houses in Beaune.
The vineyard
Bougros, located at the western end of the Chablis Grands Crus, benefits from an exceptional terroir consisting of fairly deep clay-limestone soils resting on a subsoil of Kimmeridgian marl. This 0.50-hectare plot is distinguished by a higher clay content than the other Grands Crus, ensuring excellent water reserves. The vines, averaging 60 years old, are planted at a density of 8,000 vines per hectare, promoting root competition and deep rooting. The south-west exposure ensures intense sunshine in the afternoon.
Winemaking and ageing
The harvest is carried out manually with strict sorting of the grapes. Slow and gentle pressing at moderate pressure precedes alcoholic fermentation. The Chablis Grand cru "Bougros" Domaine Long-Depaquit 2020 is then aged for 10 months on fine lees in oak barrels that have already held 3 to 5 wines, followed by a 6-month maturation in stainless steel tanks.

This Grand Cru from Burgundy is made exclusively from Chardonnay.
