Tasting
Colour
The colour is a brilliant yellow with golden highlights.
Nose
The nose opens with aromas of yellow fruit and citrus, supported by notes of white flowers and a touch of minerality.
Palate
The palate is smooth and generous, carried by good acidity that draws the wine towards a long, saline finish.
Food and Wine Pairing
With its aromatic profile and saline freshness, this wine is naturally suited to seafood: delicately prepared fish, shellfish, crustaceans or Mediterranean dishes made with herbs and olive oil. It also pairs well with fresh goat's cheese or mild soft cheeses.
Serving and Cellaring
The Côtes du Rhône 2025 Xavier Vignon is best enjoyed at a temperature of between 10 and 12°C. The estate indicates an ageing potential of up to around 2027.

The Estate
Xavier Vignon has worked as a consultant oenologist in the southern Rhône Valley since 1996, before going on to develop his own signature as a winemaker-négociant. Based between Beaumes-de-Venise, where his tasting room is located, and Châteauneuf-du-Pape, home to his professional operation, he is now the owner of the cuvées that bear his name. His approach is distinguished by an intimate knowledge of the mosaic of terroirs in the southern Rhône and by ageing innovations such as the Vinarium®.
The Vineyard
The grapes for this Côtes du Rhône come from plots in northern Vaucluse, on elevated hillsides facing east. The predominantly limestone soils encourage gradual ripening and help preserve the freshness and tension of the wine.
Winemaking and Ageing
For the Côtes du Rhône 2025, the harvest is carried out at optimal ripeness, and the grapes are then fully destemmed. A cold skin maceration allows the primary aromas to be extracted to the fullest, followed by a gentle pressing. The wine then benefits from three months of lees stirring, which adds richness and complexity. Ageing continues in demi-muids for the Roussanne, while the other grape varieties are kept in stainless steel tanks to preserve their aromatic freshness.

This blend comprises 40% Viognier, 30% Grenache Blanc, 20% Roussanne and 10% Picpoul.
